Enloe Health, a Planetree Gold with Distinction Hospital, goes above and beyond in serving seasonal, scratch-cooked meals to patients, staff, guests, and local seniors through Meals on Wheels.? Our Enloe culinary team takes pride in creating innovative recipes and showcasing the “Story Behind the Dish,” highlighting the origins of seasonal dishes. In partnership with 530 Food Rescue Coalition, they have also been able to reduce waste and bring REAL Food to over 2,000 individuals in need within our community.     A huge congratulations to our very own Chef Liz Oba?and her incredible achievement with Chef Josh Ericksen at the World Food Championships! ?? Together, they earned an impressive 2nd place finish in this renowned culinary competition. The World Food Championships are about more than just cooking—they challenge chefs to showcase creativity, precision, and unforgettable flavors under high-stakes conditions. This year, Chef Josh and Chef Liz rose to the challenge with themes like “Dinner in a Bowl” and a secret salsa ingredient for the finals. Here’s a look at their standout dishes: ?? Round One - Fusion Chili & Tostones: Chef Josh’s signature fusion chili brings together Texas and Puerto Rican flavors with ground pork, green olives, potatoes, and a vibrant mix of chili powders. This rich, flavorful chili was finished with cilantro, lime, crumbled bacon, and crispy Puerto Rican tostones—perfectly fried green plantains for that extra crunch. A unique twist that transformed a classic entrée into a satisfying, one-of-a-kind bowl! ?? Finals - Smoky Picadillo Soup: They went bold with a Picadillo-inspired soup featuring ground beef and pork, potatoes, green olives, and a carefully crafted vegetable base pureed with the surprise salsa ingredient. The soup was topped with a creamy drizzle made from Mexican table cream, avocado, and the salsa’s flavor-packed liquid. The finish? Chef Liz’s smoking gun! They made a quick run to the BBQ area to add a smoky touch, returning just in time for judging. The smoke-filled lids preserved the soup’s warmth and, as the judges revealed, elevated the tasting experience with a memorable waft of smoky flavor.     Happy Veterans Day!?? Today, we honor and express our deepest gratitude to all veterans for their service and sacrifice. Chef Will served nearly six years in the Army as a 92G (Food Service Worker), with two deployments to Iraq. Now, he continues to showcase the same commitment and excellence at Enloe Health.
