Importers, roasters, and baristas with one mission: to source and serve the best coffee in the most responsible way.

关于我们

In 1999, Jason Scherr opened a small coffee shop on Bedford Avenue in the then sparsely populated neighborhood of Williamsburg, Brooklyn. Well into the aughts, he greeted customers, prepared drinks, wiped down tables, mopped floors, took out the garbage, and did his fair share of bookkeeping (among many other jobs!). He loved the sense of community he was building, but by the mid-2000’s he started to look for a way to grow this sense of community without his personal involvement in each espresso drink. He envisioned a company that would create goodwill with his customers by being the most responsible business it could be, a business that would bring back regulars time and again even if he wasn’t their barista. Think Coffee would become the realization of that vision. In 2006, Jason opened the first Think Coffee location on Mercer Street in Greenwich Village with the mission of minimizing environmental impact and sourcing coffee as responsibly as possible. It wasn’t long after the Mercer Street opening that the Think Coffee team started to fulfill its mission by partnering with coffee producers around the globe. Today, Think Coffee remains steadfastly independent and locally owned, while working tirelessly to reduce its environmental impact and redress the inequities in the coffee supply chain. It has kept many of the same farmer relationships from its early days, providing long-term stable contracts over the years and returning hundreds of thousands of dollars to the farm working communities that need them the most.

  • Grind Size Matters: Matching Your Grind to Your Brew Method Think Tip:?The grind size of your coffee beans plays a crucial role in achieving the perfect cup. Different brewing methods require different grind sizes to ensure optimal flavor extraction. For example, a?finer grind?is perfect for?espresso, as it allows the hot water to pass through quickly, resulting in a rich, concentrated shot of coffee. On the other hand, a?coarser grind?is best for?French press, as the larger particles allow for a slower extraction, giving you a bold, full-bodied cup with minimal sediment. Why It Matters:?When you use the wrong grind size for your method, you risk over-extracting or under-extracting the coffee, which can lead to a bitter or weak taste. Matching your grind size to your brew method ensures you achieve the ideal balance of flavor, aroma, and texture. Pro Tip: If you’re unsure of your grind size, experiment with small adjustments to find the sweet spot for your taste buds. #CoffeeGrind #BaristaSkills #CoffeeTips #BrewBetter #CoffeeLovers #CraftYourBrew #PerfectCup

    Owner/CEO at Think Coffee

As we close out another year, I want to take a moment to express my deepest gratitude to you for being a part of Think Coffee. While 2024 was not without its challenges, your continued support has made this year one of the most rewarding in our journey, and I couldn’t be more thankful. From the day we opened our doors in Greenwich Village in 2006, our mission has been simple yet ambitious: to bring our community together over the most responsible cup of coffee possible. And while we know we can’t change the whole coffee industry alone, your trust in us has made a meaningful impact. This year, we’ve continued to learn, grow, and improve – always striving to be transparent and accountable in everything we do. Whether it’s our ongoing commitment to fair prices, livable wages for farm workers, or the direct relationships we’ve built with coffee farming communities, your support has helped us stay true to these values. We believe in being more than just a coffee company – we believe in creating real, honest connections. From the way we source our beans to how we share that information with you, we’re working to build something that matters. Your involvement in that journey is what drives us to keep going, to keep improving, and to always aim higher. Looking back on this year, I’m filled with gratitude for the incredible people who make up our Think Coffee community – people like you. You’ve not only supported our business, but you’ve also helped us push forward in our mission to make the coffee world a little better, one cup at a time. Thank you for being with us through this incredible year. Here’s to many more shared cups, conversations, and positive change in the year ahead. Warmly, Jason Scherr Founder & CEO, Think Coffee

?? Coffee of the Month: Santa Isabel ?? We’re excited to highlight our November Coffee of the Month: Santa Isabel, a medium roast from Dipilto, Nicaragua. Tasting Notes: Caramel, fig, and almond butter. This exceptional coffee is a product of our cherished partnership with farmer Jaime Lovo, whose farm lies along the Honduran border in the picturesque northern region of Dipilto. Jaime’s unwavering commitment to quality over quantity is evident in every bean. We’re proud to purchase his entire harvest each year, and we’re thrilled to report that the quality has consistently improved over time. The latest harvest, featuring the Caturra varietal, delights the senses with its vibrant aromas, enhanced by the surrounding citrus trees and the rich, fertile soil of the region. Each cup is a testament to Jaime’s passion and hard work, reflecting the unique terroir of Dipilto. Join us in celebrating this remarkable coffee! We invite you to experience Santa Isabel firsthand during our free in-store tastings on November 15th and 22nd. ?? Mercer, Devoe & 4th Ave: 10am-12pm? ?? Bleecker, Tribeca & Soho: 12pm-2pm
