Anyone else like to deep fry the turkey? We make it at our Thanksgiving gathering every year and in true TWG fashion, our recipe goes hand in hand with safety tips. Ingredients: - Homemade brine of your choice or Kosmos Turkey Brine. - The rub: salt, black pepper, garlic powder, and onion powder - The Deep Fry: ~14lb turkey, ~3-4 gallons of peanut oil, and Deep Fryer SAFETY TIPS TO START: 1. Never deep fry on a porch, in a garage, or under a ceiling. 2. Always have fire extinguishers present. 3. Deep frying is a fast and unforgiving way to cook turkey, so you need to stay attentive. 4. Make sure the turkey is properly sized for the pot. Smaller sized turkeys (12-14lbs) fit the common 30 qt fryer kit best. We recommend a 30quart turkey fryer kit from The Home Depot or ACE Hardware. - Thaw the turkey. SAFETY TIP: If it's not dry and thawed it's a severe safety hazard as hot grease and moisture don't mix. Be sure to pat the water off the inside and the outside with dry paper towels. - Prep the brine and then soak the turkey in the brine overnight. - Mix together the spices for the rub. Use the rub after the bird comes out of the brine and before it goes in the deep fryer. - When ready to fry fill the deep fryer with peanut oil and preheat to 275o F. SAFETY TIP: The turkey will displace a lot of volume, so never overfill the frying pot. There is usually a line of how high to fill or specific instructions with the frying kit you buy. - When the oil reaches the temperature slowly lower the turkey in using the hanger that comes with the deep fryer. SAFETY TIP: It is best to wear eye protection and protective gloves or oven mitts to protect your hands, wrists, and forearms from burns, because the oil will splatter. Slowly lower the turkey into the pot, letting any moisture bubble off and making sure your not going to overtop the pot. If the oil overtops it's going to go onto an open flame below and create a fire. Take your time and lower slowly, pull it back out if it's not going to work! - Close the lid. SAFETY TIP: Make sure that you are keeping track of the oil temperature, allow the oil to continue heating all the way up to 325o F. If the temperature starts to go over 325o F lower the burner. - Fry the turkey for approximately 3 minutes per pound but start checking a little early. The turkey needs to hit an internal temperature of 165o F in the breast. - Once fully cooked, slowly remove the turkey from the oil, still using all the safety precautions of putting the turkey in the oil. - Let the turkey rest 15 to 20 minutes before carving to serve.
