    Introducing SCARLET ISEYA | Japanese Aperitivo & Amaro ISEYA DISTILLERY Iseya Distillery is the brainchild of Osaka born Tatsuya "Moto" Motonaga. A veteran bartender who held down positions at legendary Tokyo establishments like Bar Caol Ila and Bar Benfiddich, Moto san has always held a deep appreciation for amari, the bitters of Europe. After visiting some 70 distilleries across the country, Moto returned to Japan and built Iseya Distillery in a100 year old house that he renovated in Kanagawa Prefecture. The Distillery rents a neighboring farm that Moto uses to grow many of their herbs including mugwort and wormwood. Scarlet the first of its kind and is Iseya Distillery's flagship brand that effectively has established a new spirits category in the form of Japanese Amari. SCARLET BITTER LIQUEUR Taking inspiration from the classic Italian red bitters of the 1970’s, Scarlet Aperitivo is the first of its kind. A true Japanese Amari that is comprised of 25 distinct botanicals, many of which are grown by Tatsuya Motonaga at his farm in Kanagawa. All steps of the process to make this elixir are done hands on, in small batches, without automation. All the botanicals that Moto san farms himself are done completely free of pesticides, with little human intervention. Additionally, Scarlet Aperitivo is colored in the traditional way using a natural dye derived from Cochineal insects. This amari is bittersweet with a roundness and soft spice seldom seen in its European counterparts. It pairs especially well with espresso and soda, making for a fantastic pre or post meal drink. Regardless of how you enjoy it, Scarlet Aperitivo is undeniably delicious. 28% ABV Scarlet Radice Amaro Scarlet Radice Amaro leans into its base of more than 30 herbs and roots, many grown by Iseya Distillery on their plot of farmland. This exceptional amaro takes inspiration from the classic yellow, root-based bitters of the 1970's and gives it a Japanese twist. It takes roughly 3 years to grow some of the proper roots needed for this amaro, and thus, is a labor of love for the Iseya Distillery. Bright and complex, the star botanicals of citrus peel, angelica root, wormwood, and black cumin really shine in this lovely sipping amaro.   • Wämmer Eis Go Ziie? That's a Swiss invitation to go for a drink! In our continued dive into our organic, Swiss family estates, we carry on in Valais of southwestern Switzerland to the organic and sustainable vineayrds behind Avalanche Wines. Olivier Roten, the third generation to manage his family's Valaisan vineyard and winery, met Laine Boswell, a Seattle, Washington native, during their wine studies through the Organisation Internationale de la Vigne et du Vin (Masters of Wine Science & Management). It was love at first sight, or rather, first discussion and after finishing their studies and spending time between the U.S. and Switzerland, they settled amongst the vines in the Valais. Laine owned and managed her importing company for several years beforehand, which focused on small, family owned wineries across the world, particularly in Europe. Not long after the two were married, they began to dream up ways to work together, while still focusing on their respective businesses. They decided to create a wine and label that honored both their love story, as well as the roots and heart of Swiss wine from the Alps. And with that, Avalanche was born. Avalanche White is a light and crisp white wine made from Chasselas grapes. Floral on the nose, it's a really refreshing wine to the palate with a bit of carbon dioxide. What they say is "the one and only true white wine for a Valaisan!" Avalanche Red is another story. Pinot Noir is king in this part of the Valais known as the "Coteaux de Sierre". It loves the rich limestone and active chalk soils that allow it to express itself in the best way. It has become known as one of the best expressions of a red wine produced in the Valais region. Grown in the high elevation slopes, the Avalanche Pinot Noir is crystalline with balance, finesse and clarity, just like a day spent amongst snowcapped peaks. It can be described as elegant, classy and well structured.   • Jean-René Germanier, Valais, Switzerland Organic, Sustainable This estate is one of the oldest Swiss wineries founded in 1886. Urbain Germanier harvested his first vintage in 1896 at Balavaud (a hamlet in the commune of Vértroz) and devoted his life to his vineyards. His three sons, Francis, Paul and Charles later took over and the winery is now in its 3rd generation under the direction of Jean-René Germanier and his nephew Gilles Besse. Gilles Besse was 24 when he was approached by his uncle, who is only 7 years his elder, to join the family winery. At that time, Gilles was a jazz saxophonist in Geneva and had absolutely no knowledge about wine. He rose to the challenge and began studying oenology in the Swiss school of Changins and in 1993, vinified his first wines at the estate, nestled in the heart of the Valais. Together, Gilles and Jean-René have been farming sustainably for over 25 years, are now organic certified, and have ultimately pioneered a qualitative winemaking revolution in Switzerland.   • Continuing our dive into our organic, Swiss family estates, we need to set the stage for the region the next two are rooted: The Valais of southwestern Switzerland The Valais at-a-glance Hosting the headwaters of the Rhône and just south of the headwaters of the Rhine, it is no wonder viticultural history here goes back to the 1st century AD – and grew with the Roman empire. Here in southwestern Switzerland, the Valais region lies within the heart of the Swiss Alps, not far from the French and Italian borders. The Valais is known for its dry, continental climate as well as the significant elevation of its mountain slopes, both of which make it a perfect environment for growing grapes. The Valais is the largest wine-producing region in Switzerland, although better known to outsiders for its snow, world-class ski resorts, and beautiful natural landscape. It is also aptly called “the Valley of the Sun” given its abundance of sunshine year-round. The vineyards of the Valais typically face south, and the dry autumn weather is ideal for maturing all types of grape varieties. The high elevation provides cold nights and large diurnal shifts that help to build solid acidity levels and give freshness and crispness to the wines. The tradition of viticulture and winemaking in the Valais dates back many centuries and continues to remain a way of life for the Valaisans. Vineyards blanket the majority of hillsides surrounding the region’s towns, and many families own their own small plots that they cultivate each year. The Valais is known as some of the most fertile ground in Switzerland for growing indigenous grapes as well as a number of international varieties, including Pinot Noir, which thrives in this terroir.
