  • Azure Restaurant, the culinary landmark at the edge of Waikiki Beach at The Royal Hawaiian, a Luxury Collection Resort, is taking diners on an epicurean journey that’s a true feast for the senses. Guests may select one dish from each of the five courses created by Chef De Cuisine Jose Reyes, who joined the culinary team at The Royal Hawaiian earlier this year. ?Committed to supporting Hawaii’s agricultural, ranching and fishing communities, Chef Jose emphasizes farm-to-table dining highlighting ingredients procured locally. In doing so, he aims to create extraordinary dishes and foster a deeper connection between guests and Hawaii’s vibrant local food culture. The five-course menu is $145. A coursed wine pairing is an additional $65. For those who prefer a la carte wines and cocktails, Azure offers a variety of wines by the glass, as well as craft cocktails.     The Royal Hawaiian, a Luxury Collection Resort, is proud to announce a dynamic new culinary team, highlighted by the return of acclaimed chef Shaymus Alwin as executive chef. The team includes two promotions from within the Waikiki Collection complex, plus the appointment of chef de cuisine at the oceanfront signature dining restaurant, Azure. ? Alwin returns to the Pink Palace of the Pacific, where he spent nearly 10 years at Azure Restaurant. In his new position, he oversees all culinary operations across the property, including Azure, Mai Tai Bar, Surf Lanai, Royal Hawaiian Bakery, and ‘Aha‘aina, A Royal Hawaiian Luau, as well as banquets and special events. Chef Alwin has crafted a reputation for blending innovative techniques with a deep respect for local ingredients. With a distinguished background that includes training with The French Laundry and other prestigious kitchens, he is redefining the resort’s culinary landscape with dishes that celebrate Hawaii’s vibrant produce and seafood, all while championing sustainability and farm-to-table practices. Executive Sous Chef Jeremy Shibata is the first of the internal promotions, having worked at The Royal Hawaiian as a sous chef since 2019, his culinary journeys have taken him from local kitchens to esteemed establishments. Azure Chef de Cuisine Jose Reyes, whose inventive approach and dedication to local ingredients are reflected in a revamped Azure Restaurant menu in September. Sous Chef Kandice Symister was promoted from second cook at the Moana Surfrider; she is the reigning Masters of the Craft Culinary Champion – a speed-and-skills competition with a secret ingredient that’s modeled after shows such as “Top Chef.” The global competition is put on by Marriott International with elimination rounds held at the city, state and regional levels each summer. In September 2023, Symister bested two other competitors at Marriott’s Test Kitchen in Bethesda, Maryland with her hoisin-marinated rack of lamb with mushrooms as the secret ingredient. “The Royal Hawaiian has always been a beacon of culinary excellence; under the leadership of Chef Shaymus Alwin, we are entering an exciting chapter,” said General Manager Nicole Okuna. “Our new culinary team is committed to creating unforgettable dining experiences that honor Hawaii’s rich culinary heritage while introducing innovative flavors and techniques.     Newly appointed General Manager Nicole Okuna joined Area General Manager and Managing Director Tom Calame to serve associates prime rib to conclude a fun and festive Marriott International Associate Appreciation Week. All throughout the week, there were treats galore in the associate dining rooms from donuts and pancakes, to Hawaiian Food, Ramen Bar, Sushi, Bingo and Prime Rib - with Nicole and Tom donning their chef whites to slice and serve the prime rib.     Ho‘omaika‘i ‘ana to new mother Nicole Okuna, who on May 11 becomes the fourth woman to lead The Royal Hawaiian in its 97-year history as General Manager. Nicole most recently served as Hotel Manager of The Royal Hawaiian, where she was a driving force in elevating the Pink Palace of the Pacific's guest experiences and leading key multi-hotel initiatives across Marriott Waikiki Collection over her four years in the role. "Nicole is a thoughtful and outstanding leader, with a commitment to and enthusiasm for taking amazing care of our guests and associates," said Area General Manager and Managing Director Tom Calame. "Her career with our Waikiki properties began as an intern at The Royal Hawaiian, and her career advancement across the Hawaiian Islands is a fantastic testament to the power of Hawaii's local talent and wahine leadership. Nicole's passion for excellence in elevating our guests' experiences, honoring the history and legacy of the storied resort, and mentoring emerging female leaders makes her an exceptional choice to lead The Royal Hawaiian as General Manager." Nicole has 16 years of experience in the Hawaii hospitality industry with Marriott and Starwood resort properties on Maui, Kauai and Oahu. Prior to her most recent role as Hotel Manager of The Royal Hawaiian, she held multiple leadership roles within the company, including Resident Manager of the Moana Surfrider, a Westin Resort and Spa; Director of Sales and Marketing at Sheraton Kauai Resort and Westin Princeville Ocean Resort Villas; Account Director at Sheraton Kona Resort and Spa; and Group Sales Manager at Sheraton Kauai Resort. Nicole started her hospitality journey at the Kyo-ya-owned Waikiki Collection resorts through the internship and management trainee program at The Royal Hawaiian and Sheraton Waikiki Beach Resort. She gained valuable operations experience in Housekeeping and Front Office at Sheraton Maui and Sheraton Waikiki, as well as food and beverage experience prior to the hotels. Passionate about the Hawaii community, Nicole is a member of the Historic Hawaii Foundation's Board of Trustees and a Director on the Hawaii Lodging and Tourism Association's Board. In addition, Nicole was selected for inclusion as one of Hawaii's best and brightest leaders in Pacific Business News' "40 Under 40" Class of 2023. She has previously served on the University of Hawaii at Manoa's School of Travel Industry Management Alumni Association's Board of Directors and co-chair of the Kauai Chapter of Hawaii Lodging and Tourism Association's Young Professionals and Entrepreneurs. Nicole holds a Master of Science in Travel Industry Management from the University of Hawaii at Manoa and a B.A. in Liberal Arts with an emphasis in mathematics from Pepperdine University.
