After more than 1 year of pilot programs, vendor research, process building, and employee training, I am so happy to share that LSG Sky Chefs at the Dallas Market has adopted a permanent composting process for both pre-consumer and post-consumer food waste! We started this program on Tuesday, February 25th and had our first pick up on Friday, February 28th and in just those first 4 days, we captured and diverted 13,280 lbs of food waste! As the program matures and employees become more accustomed to the change, we can estimate to divert well over 1.2 million lbs of food waste in just 365 days! Building, planning, researching, and sustaining this program is one of the most challenging things I have ever done but knowing I am making even the smallest difference to better our environmental impact on this planet makes all of the effort absolutely worth it.
