(Recipe of the Week) This sage & apple gluten-free stuffing recipe makes a delicious holiday alternative to traditional bread-based dishes. Although this recipe serves 4-6, if you want to have some leftover stuffing you'll probably want to double (or triple) the recipe. Sage & Apple Gluten-Free Stuffing (adapted from: https://bit.ly/4eEDPIU) Ingredients ?3? cups onion (diced) ?2? cups celery (diced) ?1 cup apple (cored and diced) ?? cup dates (chopped into small pieces - or try raisins) ?2 cups blanched almond flour ?2 tsp dried sage (ground) ?2 tsp dried thyme ?? tsp marjoram ?? tsp dried rosemary ?? tsp black pepper ?1 tsp sea salt ?2 tbsp organic butter (or ghee or coconut oil) ?3 eggs (whisked) Instructions ?Preheat oven to 350°F. ?Grease a medium-sized baking dish (If you're using a cast iron skillet or Xtrema pan that can go from stovetop to oven, you can skip this step and bake the stuffing in the pan). ?Crack three eggs into a small bowl and whisk together. ?Add 2 tablespoons butter/ghee/coconut oil to a large skillet and warm over low/med heat. ?Add onion, celery, apple and herbs and saute over medium heat for 5 minutes. Remove the pan from heat. ?Add the almond flour and half of the chopped dates to the pan. Stir until the flour/dates are mixed in. ?Add the eggs to the pan and mix again. ?Transfer the mixture to your greased casserole dish (skip this step if you are baking the stuffing directly in the pan). Sprinkle the remaining chopped dates over the top. ?Bake at 350°F for 45 minutes - 1 hour, or until the breading on top is light golden brown. (Recipe of the Week) Check out this Whole-Food sweet potato casserole idea for a healthier Thanksgiving side idea! Whole-Food Sweet Potato Casserole (adapted from: https://bit.ly/3AD0IPc) Ingredients For the Casserole Filling 3 cups cooked and mashed sweet potatoes 2 tablespoons ghee 2 large eggs (lightly beaten) 1 teaspoon vanilla ? teaspoon cinnamon 1 ripe banana (mashed) coconut or avocado spray oil For the Topping ? cup ghee 1 cup pecans (chopped) 1 teaspoon cinnamon 1 pinch pumpkin spice ? cup diced dates 2 tablespoons coconut sugar Instructions Preheat oven to 350o Fahrenheit. Stir together all casserole filling ingredients in large bowl. In a small bowl, combine all pecan-date topping ingredients until well combined and coated. Spray 9x9" pan with cooking spray. Spoon sweet potato casserole into pan and spread topping evenly over surface. Bake at 350o F for 30 minutes or until cooked through and topping is crisp and browned. "I was in need of starting some type of exercise program to help with my health issues and my age. It doesn’t get any better or easier when you’re older. I signed up for a different gym in the area and told myself that I needed to go at least every other day. Well, that has not been the case. I sometimes only go once a month. I feel good when I go, but that motivation has not seemed to last very long. In addition to wanting to live a more active lifestyle I also needed to learn more about nutrition to create a healthier lifestyle overall. After 2020 and finding myself even unhealthier, I decided to see what was out there that could benefit me. I have an issue with my knees so getting on the floor, and doing workouts that require a lot of impact to my knees were not possible. This has limited a lot of different types of exercises that I am able to do. I wanted to explore different styles of exercise that I have not previously tried to see if maybe there was something that would challenge me, offer me support, emphasize accountability, and most importantly begin to make exercise an enjoyable healthy habit. I eventually stumbled upon The Exercise Coach. I went ahead and scheduled my first two workouts. After my first workout I was a bit hesitant due to it being only 20 minutes I didn’t think I was going to receive the benefit I had hoped for. Thanks to my coach being insistent on trying to help me reach my goals, I decided to give in and started my journey with The Exercise Coach. My coach is wonderful to work with. She makes sure that you are doing the workouts that will help get you closer to the goals you set out to achieve. I have found that even though it is only 20 minutes I am able to get plenty out of my workouts, and after I feel better both physically and mentally. From the end of September to the end of October they had a Metabolic Comeback Challenge that I decided to try to challenge myself to clean eating. I was able to lose 5 pounds and added muscle. The resources they had were extremely beneficial in helping me stay on track with the clean eating throughout the month. By the end of the challenge I noticed my balance improved, my strength increased, and clothes started fitting more loosely. I still have a long way to go, but this has been a very motivating start. The Exercise Coach team has taught me an abundance of knowledge of what it takes to live a fully healthy balanced life. (Recipe of the Week) Tender chicken breasts in a rich dairy-free cream sauce with sweet-tart sun-dried tomatoes, fresh basil, and crushed red pepper flakes. Serve with mashed cauliflower! Marry Me Chicken (via: https://bit.ly/4fcPobj ) Ingredients ?2 tablespoons avocado oil ?4 large chicken breasts (approximately 1 ? to 2 pounds) ?salt (to taste) ?freshly ground black pepper (to taste) ?3 cloves garlic (minced) ?? cup chicken broth ?1 cup unsweetened coconut milk ?2 tablespoons nutritional yeast ?? cup sun-dried tomatoes ?1 teaspoon dried oregano ??-1 teaspoon salt ?? teaspoon crushed red pepper flakes ?2 tablespoons fresh basil (chiffonaded (see Notes), for garnish) ? Instructions ?Preheat oven to 375° Fahrenheit. Liberally season each chicken breast with salt and pepper on both sides. ?Heat avocado oil in cast iron skillet over medium heat. When hot, add chicken to skillet. Sear 3 to 4 minutes, then flip and sear on other side 3 minutes. Add a little more oil if chicken starts smoking ?Remove pan from heat and transfer seared chicken to plate. Add garlic to skillet and cook until fragrant, approximately 1 to 2 minutes. ?Stir in broth and coconut milk, then slowly add nutritional yeast, sun-dried tomatoes, oregano, salt, and red pepper flakes. ?Return skillet to heat. Bring mixture to simmer, then return chicken breasts to skillet. Quickly flip chicken a time or two to coat in sauce, then transfer entire skillet to oven. Bake 15 to 20 minutes, or until chicken reaches internal temperature of 165° Fahrenheit. ?Remove chicken from skillet and plate with desired sides. Spoon additional sauce from skillet over chicken, garnish with chiffonaded basil, and serve immediately. Note: This dish is approved for the 30-Day Metabolic Comeback Challenge. "When I found out that I won the Metabolic Comeback Challenge sponsored by The Exercise Coach, I was very excited. But I was excited for more than the obvious reason, which is a free month of sessions. I was also excited because of the satisfaction of staying with it till the end, especially when it became tough. It’s not easy eating a salad while the rest of the family enjoys Taco Tuesday. Or missing out on pizza from our favorite pizza joint. Further, I was excited because of the huge change it made to my body, both visually and internally. Coming off of the summer of COVID, I was at my highest weight ever, which was a result of bad habits and bad attitudes about food. The Comeback Challenge helped me to reset my body’s metabolism, and also my thoughts/feelings about food.
