Bubbly stuff incoming! ?? ?? ?? With this brite tank we can now provide small batches of sparkling products (either force carbonated or charmat/bulk method). Brite tanks are very similar to standard glycol jacketed wine tanks, but they are able to contain much higher pressures to allow for carbonation. Beverages are either “force” carbonated or charmat/tank/bulk carbonated. Force carbonation uses a “carb stone” (stainless tube with zillions of microscopes holes in it) connected to a high pressure CO2 source and regulator to dissolve CO2 into the liquid over time to a specific pressure at the set temperature. Then it’s ready to package! Bulk/tank/charmat method uses yeast and a “dosage” of additional sugar (more juice, sugar, concentrate, etc) added to the beverage to produce additional CO2 (and alcohol) at a pre-calculated rate based on the sugar added. The wine is then racked off of the lees or filtered directly into packaging. With this tank we can now make: ?? sparkling wines ?? sparkling ciders ?? sparkling sangria ?? Coke (wait, not that one!) Firing up the crossflow for a filtering pass! This Velo VLS crossflow/lees filter allows us to filter out and “polish” wines to their finished state. It can also greatly increase our wines yield by filtering the wine out of the lees (gunk left at the bottom of the tank after fermentation). It’s a powerful machine for getting only the finest quality (and in this case quantity) wine out to our customers and consumers! This Muscat blanc turned out FABULOUS!!! Thanking the Lord for the gift of rain, even when it comes with some fungal pressure to spray for! ??
Not too common that we get cloudy days around here in the TX High Plains AVA, but May is usually when they do come! Had to snag a picture over the Tempranillo ?? We have had some short bursts of intense rainfall and humidity as the storms that have flooded the eastern parts of the state have been cropping up at the front boundaries right over our heads! Makes for nervous days in spring, watching radar and cameras for hail and tornados! ??? ?? ??? Nearly 90/100 days here are sunny, bone dry with 10-20% humidity, and 15-20mph breezes, which is great for deterring fungal disease pressures (one of the biggest risk categories and costs to control for grapes). However, we do have a few days every year where it is 98% humidity, still, and HOT! Perfect for fungal disease to take a foothold. Our weather is partly the reason why 70%+ of Texas wine grapes come from the Texas High Plains AVA. Low disease pressures mean less fungicide spraying, lower farming costs, and better quality fruit. We use WESTERN WEATHER GROUP, INC. meteorological stations at our vineyard sites to monitor, record, and predict these conditions and disease pressures. Very helpful data when making management decisions! The more weather stations we add in the area, the better the dataset gets, and the better the forecasts get ?? We live right on the edge of being a desert, averaging 16-18” of rainfall per year. As we say around here, “You should be here to see the day we get it!” ??? ?? ?? ?? Texas Vine Country FermForge ?? Kegs are the way of the future for wine @ on-premise sellers!
Kegs + apple cider! Only distributed in West Texas, we make it right here in Brownfield, TX at our winery FermForge. Our newest and favorite packaging for wines and ciders is the keg format. Here we are using ultralight polymer KeyKegs which are recyclable and suuuuuper lightweight! Kegs allow the on-premise seller to make pours of wine or cider from their existing infrastructure without having to potentially waste wine from partially poured bottles. No contact with oxygen means the wine stays fresh much longer. The elimination of carboard cases and glass bottles means the sellers margin per pour also goes WAY up!
