  • Skip the mouthwash on days you use beetroot juice. Why? Anti-bacterial mouthwash kills the bacteria needed to convert dietary nitrate into nitric oxide, the compound responsible for vasodilation (allowing more blood flow to working muscles). This conversion is crucial in order for beetroot juice to be effective at improving endurance, intensity, and intra-training recovery! Questions on how to best utilize beetroot juice for champs?   • Easy meal prep burritos! ?? Ingredients: 12 block feta 12 large eggs 6 large tortillas diced sweet potatoes (we used pre-cooked, frozen) black beans salsa roasted red pepper dip (we used mama’s homestyle spinach) Method: Preheat oven to 355 degrees and grease a baking dish with olive oil (we used 10x10). Place feta block in center and crack eggs around it. Season with salt/pepper if desired. Bake until egg whites are mostly set and feta starts to melt (about 26-28 minutes for a 10x10). While baking, spread 1 Tablespoon of the roasted red pepper dip onto each wrap. Once eggs are baked, use a spoon or fork to mix everything together into a mixture. Divide the egg mixture evenly among the 6 wraps. Add in the sweet potatoes, spinach, salsa, and black beans. We made two different kinds of burritos — one with sweet potato/ spinach, one with black beans/salsa. Choose any combo you like and mix up the veggies/sauces! Roll up each burrito tightly and wrap in foil. Once all burritos are wrapped, place in large ziplock bag in the freezer. To reheat, remove foil and microwave for 2-3 minutes total (flip it halfway through). Recipe inspired by @dietitianrose Pro tip: pair with extra carbs (like fruit or oatmeal) on race day ??
