Meet Ashley Henning, one of the first hires at Sustainable Beef! With 17 years of experience in the meat industry, Ashley brings a wealth of expertise to her role overseeing HR. A proud native of Southern Minnesota and a graduate of the University of Minnesota Twin Cities, she earned her degree in Management, Psychology, and Communication, with a minor in Spanish. Ashley’s career in the meat industry began as an Assistant Industrial Engineer, quickly advancing to Industrial Engineer. In 2012, she transitioned to the role of Safety Manager, which she has excelled in ever since. Ashley also earned her MBA from Colorado State University in May 2022. As we move closer to the startup phase at Sustainable Beef, Ashley is eager to continue working with our dedicated team. We're currently looking for passionate individuals to join us, with several HR openings available. Sustainable Beef is excited to introduce Paxton, who has joined our team as the new Technical Services Manager! Paxton brings a wealth of knowledge and experience in the beef industry, with a deep passion for cattle well-being, applied research, and industry engagement. Paxton holds both a Bachelor’s and Master’s degree in Animal Science from Colorado State University (CSU), and she is currently pursuing her PhD at her alma mater. Throughout her academic career, she has contributed to a robust research program, publishing extensively on the relationship between pre-slaughter management and meat quality outcomes. Her work also includes developing innovative measures to assess feedlot cattle welfare and examining the critical intersection of caretaker and livestock well-being in production systems. Paxton’s industry experience is just as impressive. She has led Beef Quality Assurance (BQA) trainings for cattle transporters and feedlot employees, driven data collection for the National Beef Quality Audit, and has shared her insights at various industry events on best practices, cattle handling, transport, and slaughter. Paxton is also passionate about teaching and mentorship, guiding the next generation of Animal Science students at CSU. At the core of Paxton’s approach is trust and transparency—values she believes are essential for fostering strong relationships with producers and industry stakeholders. She is committed to research-driven solutions that are not only practical but also meaningful, aligning perfectly with Sustainable Beef’s mission. Paxton is excited to work alongside our talented team at Sustainable Beef to help produce the highest-quality beef while leading the way in cattle well-being and food safety.
