Before an apple goes into cold storage, we first take a sample to find out its starch and sugar levels ?? The amount of sugar and starch an apple has tells us if it should be packed right away, or put into cold storage for later to allow the apple's starches to convert to sugar, resulting in sweeter flavor! Using an iodine solution that turns the starch in apples to a dark black color, we can see which fruit contains more sugar (best for eating soon), and which contains less (best for storing) Learn more about Apple Starch Testing from our Quality Control Manager in R&D Tarrah Gerber!
