    Dubai, round two! ?? The first time I was here was back in 2019, commissioning one of our very first color sorters and hosting an event for local roasters. That was machine #3 for us—just the beginning! There was so much excitement seeing the Pearl Mini in action, doing its thing. ???? Fast forward to World of Coffee Dubai Feb 10–12. I'll attend, and giving a few live demo of this machine #3 who is now at Emirati Coffee. If you want to see it up close, write me. The Gulf region has now become a key market for us. There are just as many Pearl Minis in Saudi Arabia as in the US ; It’s become almost a standard piece of equipment of new roasteries here... just like what a destoner was 20 years ago. But with challenges come opportunities for innovation and growth. ?? **Key Strategies to Consider:** 1. **Automate to Innovate**: Embrace automation to enhance efficiency. From reducing bagging time with advanced packing machines to using color sorters like the SOVDA Pearl Mini to maintain and enhance coffee quality, technology can be a game-changer. 2. **Sustainable Partnerships**: Forge long-term contracts with farmers, offering them fair and stable prices.     Coffee roasting is a craft, but for too long, the physical demands of the process have posed significant challenges to roasters. At Black and White Coffee Roasters, these challenges came to the forefront. As Co-Founder Kyle Ramage explained. "So we're like, okay, cool. This is a problem because we feel like some of our best roasters don’t fit that body type. How do we design a system that doesn’t require physical strength or immense physical strength as part of the deal?"     Six years ago, I walked into my first trade show with SōVDA at COTECA in Hamburg, Germany. Back then, no one knew who we were, and the idea of color-sorting roasted coffee was so new that it often led to some interesting conversations! Let’s just say it wasn’t always easy to explain what we were doing with Sovda. ?? Fast forward to this week: I’ll be in Berlin ???? at COHO Expo: The Coffee & Hospitality Expo, co-located with The European Coffee Symposium It’s pretty cool to see how far color sorting has come. What started as a fresh idea has now become a standard practice for many, and even if not everyone color-sorts their coffee yet, it seems everyone has an opinion on it!     If you’re diving into the world of optical sorters, you’re probably passionate about brewing the best coffee possible. ? While high accuracy rates in sorting equipment may catch your eye, there’s more to it than just removing defective beans. The real challenge? Achieving precision without tossing away quality coffee. This is where the art of calibration comes in. A perfectly timed burst of air is all it takes to reject a quaker, but if it’s even slightly off, you risk losing perfectly good coffee. This unintentional rejection, termed “Carryover,” poses a significant concern.
