    Assistant Professor of Water Resources Engineering

    “I would become a water scientist when I grow up” from a 3rd grader was the best thing I heard among 175 attendees (from age 1year to about 65-70 years) at an event “MEET A SCIENTIST “ organized by South Dakota Discovery Center at their Pierre, SD, Office on 03/20. The event was closing for a 6 week Science Communication Fellowship. Multiple students at South Dakota State University along with three faculty members in the department of SDState ABE and one faculty from @SDState Department of Natural Resource Management were selected and awarded this fellowship. Thanks Dr. Rhea Waldman! This kind of impact is something all educators vision. The impact multiplies when it comes from females who want to pursue career in STEM. So proud to share with the community how and where we can use #hydrologicmodels with a small demonstrations on “Plants help us to keep water clean” and “Besides, human sustenance, aquatic life prosper in cleaner water.” Something best happened I could not resist to share and would like to learn more about your experience in such settings. Happy #Worldwater Day to all my colleagues and water community and beyond.     Welcome to March, this month's Harvest of the Month is Bell Peppers! Bell Peppers come in a range of colors including Green, Yellow, Orange, and finally Red. They all come with different flavor profiles and amounts of nutrients in them. To celebrate this month's Harvest make this tasty recipe! Recipe: Stuffed Bell Peppers with Quinoa & Black Beans Ingredients: 4 large bell peppers (any color) 1 cup quinoa, rinsed 2 cups vegetable broth 1 can (15 oz) black beans, drained and rinsed 1 cup corn kernels (fresh or frozen) 1 cup cherry tomatoes, halved 1 cup shredded cheddar cheese 1 tablespoon olive oil 1 teaspoon ground cumin 1 teaspoon chili powder 1/2 teaspoon garlic powder Salt and pepper to taste Directions: Preheat your oven to 375°F. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed. Cut the tops off the bell peppers and remove the seeds and membranes. If needed, slice a small portion from the bottom to help them stand upright. In a large skillet, heat olive oil over medium heat. Add corn, black beans and cherry tomatoes. Sauté for 5-7 minutes until the vegetables are slightly tender. In a large mixing bowl, combine the cooked quinoa, sautéed vegetables, ground cumin, chili powder, garlic powder, salt and pepper. Mix well until all ingredients are evenly distributed. Stuff each bell pepper with the quinoa and vegetable mixture, pressing down gently to pack the filling. Top each stuffed pepper with shredded cheddar cheese. Place the stuffed bell peppers in a baking dish. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and golden brown. Remove from the oven and let them cool for a few minutes. Garnish with fresh cilantro if desired. Serve warm and enjoy your flavorful, nutritious stuffed bell peppers! #harvestofthemonth #healthyeating #healthysd
