September is National Mushroom Month! Mushrooms support a healthy immune system and contain nutrients including selenium, vitamin D and vitamin B6. This fungus brings a savory flavor to meals and is low in fat, sodium, and calories. Consuming mushrooms reduces risk for cancer, improves brain and gut health and lowers cholesterol. In honor of National “Build a Better Breakfast Month,” try these sausage, mushroom, and spinach egg bites for an easy breakfast or snack. INGREDIENTS 1 tablespoon olive oil 6 ounces breakfast sausage (try chicken or turkey) 4 ounces cremini mushrooms, thinly sliced (about 2 cups) 2 cups coarsely chopped baby spinach 8 large eggs 2/3 cup low-fat milk 1/2 teaspoon ground pepper 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon salt 1. Preheat oven to 375°F. Coat a 12-cup muffin tin with cooking spray. 2. Heat oil in a large nonstick skillet over medium-high heat and add sausage. Cook, stirring often and breaking into crumbles, until browned and cooked through (about 4 minutes). Using a slotted spoon, transfer the sausage to a paper-towel-lined plate, leaving the drippings in the pan. 3. Reduce heat to medium. Add mushrooms and cook, stirring occasionally, until softened and browned in most spots (about 6 to 8 minutes). Add spinach. Cook, stirring constantly, until wilted (about 30 seconds). 4. Transfer the vegetable mixture to the plate with the sausage. Let cool for 5 minutes. 5. Meanwhile, whisk eggs, milk, pepper, garlic powder, onion powder and salt in a large bowl until thoroughly blended. Stir in the cooled sausage and mushroom mixture. Divide the mixture among the prepared muffin cups, about 1/4 cup each. 6. Bake, rotating the pan front to back once, until eggs are set (14 to 16 minutes). Let stand for 5 minutes before removing the egg bites from the pan. To Make Ahead – Refrigerate in an airtight container for up to 3 days or wrap individually in plastic and freeze for 1 month. To reheat, remove plastic, cover with a damp paper towel and microwave until hot (about 1 minute). These accidents can be prevented by teaching children how to be safe and responsible on the playground. Explain the importance of using the equipment the proper way, such as sliding feet-first and sitting down on swings. Teach your child to be mindful of their surroundings and keep their head up and eyes open. Remind them to always look before using a piece of playground equipment to avoid unnecessary collisions.

September is National Better Breakfast Month and the perfect opportunity to give some well-deserved attention to the most important meal of the day. Follow these six tips from Sadler Health Center's Registered Dietician Melissa Karlheim to build a better breakfast: 1. Pair carbohydrates with lean protein and healthy fat – Although carbs are important for brain health, don't forget to pair them with lean proteins such as eggs, turkey bacon or chicken sausage and healthy fats such as avocados, nuts or seeds. 2. Focus on fiber for bowel health – Incorporate fiber into your breakfast plate by including a side of fruit, adding vegetables like peppers, onions and spinach into eggs or having a complex carbohydrate such as whole wheat toast or oatmeal. 3. Hydrate right with water – Drink water in the morning to replenish and rehydrate your body after a full night of rest. Prioritize water before you drink your morning cup of coffee to feel less sluggish and more alert. 4. Eat the rainbow with lots of color – Bring your breakfast to life by adding plenty of colorful fruits and vegetables. 5. Think beyond traditional breakfasts – If you don't like traditional breakfast foods, try a sandwich, dinner leftovers or even a salad. Just ensure your meal has the perfect balance of lean protein, good carbohydrates and healthy fat 6. Make it easy – If your mornings are usually busy, prep your breakfast ahead of time by freezing breakfast sandwiches or making overnight oats. It’s National Sandwich Month! From breakfast sandwiches to BLTs, there are so many ways to enjoy this beloved, versatile food. Sadler Health’s Registered Dietitian Melissa Karlheim has five dietitian-approved tips to make your sandwiches even more nutrient-packed. 1. Add healthy fats – Including healthy fats, such as avocados, helps with satiety. 2. Switch to whole-grain breads – Whole grains contain more nutrients and fiber than refined carbohydrates. When choosing bread, look for whole wheat or whole grain. You can even try a whole wheat or spinach wrap. 3. Load your sandwich up with vegetables – The more colorful veggies you add, the more vitamins and minerals your body will receive! 4. Be mindful of your meat – Choose lean meats like turkey or chicken or other lean proteins such as eggs or beans. 5. Get creative with flavors – Try adding apple slices, fresh herbs, hummus or homemade spreads to your sandwich for more flavor.
