In the food processing world, “learning by doing” and seeking out experts are key parts of creating a successful model. That’s why we jumped on the opportunity for a visit to Rhino Foods, Inc. to meet with Rooney Castle, Rhino’s Vice President, and Don Holly, Rhino’s Technical Assistance Director. Although we touched on a variety of topics (and even got some free samples!), we focused on three of the most important aspects of food processing that are top of mind for Salvation Farms: 1) food safety; 2) food processing; and 3) workforce development. Rhino runs a “fully inclusive” workplace. Although there is much to share tied to their approach, the key focus is on a willingness to learn, being on time, and showing respect. Their 2-day onboarding “crash” course program gives new employees a thorough overview of not only the “what”, and the “how”, but most importantly, the “why” when it comes to important food safety measures. They also shared helpful information on their Employee Exchange Program, a model the Vermont Commodity Program is considering as we anticipate having to contend with seasonal fluctuations for food availability tied to seasonality and customer demand. We sincerely appreciate the opportunity to ask questions and learn from a successful business. Although at first glance, there doesn’t seem to be much overlap between minimally processed veggies and fruit and cookie dough, it turns out there really is! #foodprocessing #vermont
