  • One of Kim's favorite cuts of beef is a chuck roast. A chuck roast is one of the most versatile cuts of beef—it’s rich, flavorful, and breaks down beautifully when cooked low and slow. Whether you’re making tacos, pot roast, beef stew, or sandwiches, it delivers melt-in-your-mouth tenderness every time. Today, Kim’s using her mom’s old crock pot to make shredded beef for tacos, but there are so many ways to enjoy this cut. Braise it, smoke it, or slow-cook it—whatever method you choose, you’re in for something delicious. Want to try it for yourself? Check out our Smother Me Slow Package, which includes stew meat, cutlets, chuck roast, and rump roast—perfect for all your slow-cooked favorites. Order Here: https://lnkd.in/g3UAq6Mj Or try our Slow Cook Package packed with 3 lbs of stew meat, 3 beef cutlets, 1 chuck roast, and 1 quart of chicken stock—everything you need for hearty, home-cooked meals. • Sustainability isn’t just a buzzword—it’s the foundation of everything we do. Our rotational grazing system ensures that cattle are moved strategically across different pastures, preventing overgrazing and allowing the land time to regenerate. This practice enhances soil fertility by promoting the natural breakdown of organic matter, increases water retention by improving root structures, and even helps sequester carbon from the atmosphere, reducing our environmental footprint. But it’s not just about the land—it’s about the cattle, too. Healthy land produces nutrient-rich forage, which leads to healthier cattle and, in turn, higher-quality beef. Our animals are raised in a low-stress environment, given the space to graze as nature intended, and cared for with the highest standards of animal welfare. Because at Caney Creek Ranch, we believe that taking care of the land means taking care of the cattle—and taking care of the cattle means taking care of the families who put their trust in us to provide real, sustainably raised beef. #pastureraised #sustainability #cattlegrazing #rotationalgrazing #familyoperated #texasranchers?

  • As a young athlete, Wesley Ratcliff worked on a wealthy Houston lawyer’s ranch, dreaming that one day, he’d own land of his own. At the time, it felt impossible. But years later, while driving down a country road, he saw a sign that changed everything: “For Sale.” That moment wasn’t just about buying land—it was about securing a legacy. Black ranchers have fought to own and keep land for generations, despite the challenges. This Black History Month, we honor the stories of those who dared to dream bigger than their circumstances. Wesley’s story isn’t just history—it’s a reminder that ownership, legacy, and resilience matter. ?? Save this for inspiration & share to honor Black ranching history. #BlackHistoryMonth?#BlackLegacy?#RanchingHistory?#BlackRanchers?#TexasRanching?#RanchLife

As winter settles in on the ranch, it's a time for reflection. The quiet of the season gives space to think about the generations before me—my grandfather, my father, and the hard work they put in to build what we have today. It’s also a reminder of the mission ahead. Black History Month is a chance to reflect not only on the rich history of Black Americans but on how we continue to shape the future. For me, that means preserving the legacy of small family farms and ranches, where hard work, integrity, and community are at the core of everything we do. The work we’re doing at Ratcliff Premium Meats is about more than just beef. It’s about protecting the land, supporting our local community, and ensuring that future generations have the opportunity to thrive in this industry. We have a long way to go, but I believe that by sharing our story, educating others, and staying true to the values that have been passed down to me, we can make a lasting impact. This Black History Month, I’d love to hear from you—what legacy are you working to build in your own life, and how do you honor those who came before you? Drop a comment below????????????, and let’s celebrate the stories that shape us all. Here’s to the future we’re building, one that honors the past and uplifts the present. #BlackHistoryMonth #BlackOwned #FamilyOperated #LegacyInTheLand #SmallFamilyFarms #WinterOnTheRanch #RatcliffPremiumMeats

  • Not all beef is created equal. If you're after better flavor, look no further than pasture-raised beef. Cattle that graze on natural, varied grasses develop a richer, more distinct flavor profile compared to corn-fed beef, which tends to be milder and more uniform. The difference in taste is real, and it’s important to know where your beef comes from. At Ratcliff Premium Meats, we prioritize quality from the ground up—so you can taste the care that goes into every cut. Experience the difference with beef that is raised right, for better flavor and a better future. Support local, support family, and taste the difference. Click the ???? link in our bio ???? to place your order today and experience what beef SHOULD taste like. #PastureRaised #BetterBeef #SupportTexasRanchers #FamilyOperated #Steak #KnowWhereYourFoodComesFrom #PremiumBeef
