We're stealing a favorite from Cary's @sidebarnc, Carolina's Gold. Once a staple of the Carolina's, Carolina Gold rice is creamy, nutty and builds with a wonderful texture so how could we not make a cocktail with it? If you don't want to make this yourself and you should, head over to Side Bar and order 15 of them. 1c Carolina Gold Rice 0.75c Demerara Sugar 2tbsp Honey 1c Milk 1/4tsp Vanilla Extract 1 stick of cinnamon Dark Rum Do this ahead of time!!! Place rice in a large bowl and cover with 3 cups of water, let soak overnight. Puree rice and water until smooth and strain through a mesh sieve. Add the sugar and honey and stir until combined. Add milk ,vanilla extract and cinnamon and stir again. Let flavors combine in the fridge for a few hours. When ready, add rum until the desired flavor but look for a 3:1 ratio. In a rocks glass with a few large cubes pour mixture, add a few dashes of your favorite bitters. We like Mole or Tiki style bitters. Last night we made a few Bitter-centric cocktails at the office so this one came easy for an "off-the-wall" cocktail this week. Using a full 2 ounces...Yesssss you are reading that correctly, this simple cocktail is robust, fresh and engaging but please imbibe after shooting. Courtesy of Cure in New Orleans Gun Shop Fizz 2oz Peychauds Bitters 1oz Lemon juice, freshly squeezed heathens! 1oz Simple Syrup, 1:1 ratio 2 strawberries 3 grapefruit peels 3 orange peels Top with Sanbitter In a mixing glass, combine all the ingredients and muddle until strawberries are smashed and peels are expressed. Double strain into a tall glass (come by the office and we have JUST the right glass) with ice. Top with Sanbitter (or sub club soda and a splash of Campari).
