At Nordic Cooking, we specialize in creating culinary experiences that extend beyond just delicious, plant-based meals. Our offerings include vegan and gluten-free classes, both private and group, along with corporate sessions, private events, dinners, and convenient food delivery/pick-up services. But more than a purveyor of tasty dishes, we're dedicated to nurturing a community and championing environmental sustainability. Our approach draws inspiration from the Danish concept of Hygge, embodying a commitment to crafting a cozy and inviting atmosphere.     Together with Celadon Home and Nectar Diaries, we transformed the Stolon Superfoods ambiance into a fusion of French farmhouse elegance and Nordic hygge. From the moment our guests arrived, they were greeted with the comforting aroma of the classic Nordic baguette and vegan herb butter, setting the stage for an unforgettable culinary experience. Our menu was a delightful array of flavors, from the rich black bean tofu pasta to the refreshing bite of shaved brussels in champagne vinaigrette. Each dish was crafted with care, featuring locally-sourced produce and a touch of creative flair. Special thanks to Charlie Kendall for serenading us with beautiful French tunes. Stay tuned for the next Girls' Night Dinner Series, open to everyone (yes, even the guys!) as we continue to build a community around food, passion, and sustainability. The upcoming Paris Olympics is set to increase the plant-based food offerings compared to previous years, which is part of a broader goal to cut the event's carbon footprint by 50%. ?? The initiatives include: ?? 33% of meals in the Athletes’ Village will be plant-based ?? 60% of the general public's snacking options will be plant-based ?? 50% of the workforce's meals will be plant-based The options include?plant burgers, quinoa salads, falafels and vegan tuna.     To Label or Not to Label: Unveiling the Impact of ‘Vegan’ Labels on Consumer Choices! ????? Fascinating insights from recent studies have sparked a lively debate on the influence of food labelling, particularly when it comes to the ‘vegan’ tag. ??? ?? Study Snapshot 1: Researchers from Baruch College and the University of Southern California conducted a national food choice experiment involving 7,341 participants. Participants were asked to choose a food basket with labels ranging from ‘vegan’ to ‘healthy’ and ‘sustainable.’ Surprisingly, only 20% opted for the ‘vegan’ labelled basket, while choices soared to 42%, 43%, and 44% respectively when labelled ‘healthy,’ ‘sustainable,’ or both. ?? Study Snapshot 2: A separate study, published in Food Quality and Preference found that the use of certain adjectives had a positive effect.?For instance, the basic name ‘vegan burger’ was tested against alternatives such as ‘delicious Aussie burger,’ ‘juicy American burger’ and ‘juicy smoky American burger.’?Among these, ‘juicy American burger’ and ‘tasty Italian vegetable lasagne’ demonstrated the largest effect on appeal and likelihood of ordering. ??♂?
