A few weeks ago, Nimbus launched in Chicago River North. The space houses 17 kitchen units ranging from 400-1,600 sqft, has 246 feet of commercial hoods outfitted with an array of premium equipment, and includes a large event space allowing for direct interaction between food business members and the surrounding community. We're thrilled to be opening these state-of-the-art facilities to a new cohort of chefs and operators; we couldn't think of a better city than Chicago — which is such a vibrant and innovative food hub — to mark our inaugural expansion beyond New York City! Five years ago today, I left my supply chain operations role at Away to focus on Nimbus full time. When you're in the trenches of entrepreneurship, it's hard to take a step back and feel proud of what you've built. So on my five-year anniversary, I'm allowing myself to feel proud. I'm proud of my 25-year-old self for taking the leap to start a company, despite the dozens of naysayers telling me this industry was too difficult, or that I was too inexperienced, or that "I'd give up in a few years when I had children." I'm proud to have supported hundreds of food businesses including the world's best restaurants like Noma,?enterprise operators like Jersey Mike's Subs, top delivery platforms like DoorDash,?decorated chefs like Cristina Martinez (Netflix Chef’s Table),?and hundreds of innovative start ups across catering, prepared meals, food delivery, CPG, and more. Most importantly, I'm proud of the passionate, dedicated, and kind team that has made this all possible. Thank you to Romina Gupta, Robert Gleyberman, Janae Butler, Justin Richter, Arianna Cooper, Jordan Palacios, Emily Gustafsson, Samia Juras and Jhoana Sanchez for taking this leap of faith and working tirelessly to build Nimbus into what it is today.
