Perfectly baked Sourdough using a Turbofan E32D5. @diverbaker shares his tips for baking awesome 'Country Style' sourdough bread using his Turbofan. 1- Use racks # 2 & 4 and place on thermal stones (or similar) that cover the full surface area . 2- Set oven to 260 C for an hour. 3- Load the loafs, spritz with some water using a sprayer 4- Cover the top vent with a light wet towel 5- Close the door and inject Steam additionally 3 to 4 times 6- STOP the oven 7- After 23 minutes, remove the wet towel off the vent and re-start the oven at temp 200-220C. 8- After 2 minutes, open the door for a few seconds to vent the chamber. 9- Continue the bake for an additional 25 to 35 minutes depending of loaf size and desired colouring effect. 10- Remove the sourdough loaves.
