A culinary activation for the legendary tortilla and Mexican packaged goods brand Mi Rancho for their 85th anniversary in Northern California. I curated a menu that utilized the brands products with my dishes to emphasize the versatility of their products. That their chips and salsa could be paired together on their own or eaten with a beautiful apple aguachile. Although this was a family style meal, the first course was plated in order to engage guests and help them get a sense of my culinary point of blew. It was a granny smith apple and fresh wasabi aguachile with scallops and chive oil. The rest of the meal centered summer and fall produce and utilized local organic ingredients which went with the brands ethos using organic ingredients in their tortillas and salsas. The meal included a 7 hour lamb birria, chicory and fig salad, grilled vegetables in an epazote sauce, confit tomatos and a passion fruit and fig leaf oil Mille-feuille. For the beverage we brought in a beverage brand that went well with the story of ancestral nixtamalization and utilizing corn. I created a cocktail using Casa Lumbre Nixta corn liqueur, fresh apple cider, lemon juice and thyme syrup topped with tonic water. A beautiful dinner for a well respected brand and local creatives.
