I had an incredible time last week at the #FoodTechSummit in Mexico! ?? The food ecosystem in Mexico and across LATAM is vibrant, and it was inspiring to learn more about the region’s unique perspective on the future of food, and to bring Minus: A Compound Foods Company. Connecting with leaders who are driving real change and reuniting with friends made the experience even more special. A particular highlight was meeting the amazing community at KM ZERO Food Innovation Hub led by the visionary Beatriz Jacoste Lozano. They’re doing incredible work fostering collaboration, building community, and pushing forward food sustainability initiatives. As we continue working to create solutions that transform industries and lessen the burden on our environment, it's crucial to ensure these changes reach every corner of the globe—especially developing regions, where food security remains an urgent priority.
