Mayana Chocolate is run by husband and wife team Daniel and Tamara Herskovic, who are as in love with chocolate as they are with each other. Daniel takes world class chocolate, adds his culinary finesse and creates the edible treasure of a Mayana chocolate. Tamara brings her interior architecture schooling and event planning career to design and radiate the experience of Mayana. She fashions the chocolate packaging and custom designs and brings warm communication to all clientele.

    I get asked a lot of how I come up with new ideas for candy bars. The very first candy bar that I created was the Fix Bar. It was inspired by my love of the Twix Candy bar. Who does not love the combination of a cookie with caramel and covered in chocolate. Our approach to making such a bar is completely different than industrial made candy. Compared to the big brands you will notice that our ingredient list is rather short and the ingredients used are very easy to pronounce. We start off by making our salted caramel. We fire up copper kettles and boil cane sugar and large quantities of Wisconsin heavy cream and butter. After slow cooking for almost 3 hours we finish the caramel with Fleur de Sea salt still wet from the oceans of France and pour the contents of the kettle on to 18 foot long granite tables. We let the caramel sit overnight. Then we get to work on our shortbread which is simply salted butter, flour, sugar, and vanilla. we roll it out and bake it not too light and not too dark. The next day we assemble the cookie and caramel together and send it through a river of beautiful dark chocolate couverture from Ecuador. Our packaging team then works their magic so that our candy bars are presented beautifully. Are you curious about what else goes on in a chocolate factory? Let me know and I will share.
