Meet the Coco-Cobán, the third drink on our fall signature drink feature. Coco-Cobán is a fresh take on a spiced mocha that incorporates chile cobán, a rare Mayan chile that grows in the mountains near Cobán, Guatemala. This chile has a unique fruity sweetness that is balanced with a light smoky quality and a soft heat in the finish. Cinnamon and nutmeg add a warming fall spice to this drink, while the indulgent dark chocolate ganache adds a rich depth and sweetness.

Welcome back Finca de Dios for it's 15th season on our menu! Husband and wife duo Ellen and Stuart Prentice oversee a 19-hectare farm, encompassing a multitude of microclimates. Ellen inherited the farm from her father in the early ’70s, falling in love with the coffee growing process and planting more and more on the land. Together with their daughter Ashley, they’ve established state-of-the-art processing equipment for their farm, Finca de Dios (Farm of God). In this year's harvest, expect notes of juicy red pear, peach, and sweet toffee. Available online now, and in cafes this weekend.

Warm up your hands with our next fall signature drink feature, the Mulled Magic. Mulled Magic is a lightly caffeinated drink that utilizes the dried skins of coffee cherries, called cascara, steeped like a tea. Although the recipe doesn’t use apples, the combination of cascara, cinnamon, and malic acid recreates the experience of drinking a comforting mulled cider.

It's time for our fall seasonal blend to rejoin our menu: Harvest Moon! Finca de Dios from Fraijanes, Guatemala forms the base of this fall blend. Grown on the innovative farm of Ellen and Stuart Prentice with the help of their daughter Ashley, Finca de Dios is a consistent Madcap staple. Finca de dios provides a rich and silky base to this year’s Harvest Moon. Another familiar component of the blend is Reko, out of Kochere, Yirgacheffe, Ethiopia, named after Reko mountain and the washing station the coffee is processed at. Reko is well known by its fans for its tea-like qualities and electric acidity. Once combined, the final blend is well-rounded with notes of caramelized sugar sweetness and crisp, floral apple. Our Grand Rapids cafes proudly source their honey from local beekeepers over at @michiganbeeco. Their honey bees enjoy wild flowers like clover and purple cone flower, while the beekeepers continuously upgrade and improve their apicultural practices to best nurture their bees. The next time you order a miel, remember to thank our local honey bees!

Meet the first of our fall signature drinks, the Banana Stand. The Banana Stand takes the classic flavors of banana bread and transforms them into a cappuccino. For the drink creator, Ravi, fall wouldn’t be the same without his mom’s banana bread, so he wanted to share this experience with our guests. This drink is full of caramelized banana flavor, warm baking spices, and topped with a dusting of cocoa powder. As is custom with Ravi's drink recipes, the final beverage wouldn't be complete without a treat on the side, so the Banana Stand is paired with a Biscoff cookie. Available at all Madcap cafes.

Late last month, we had the privilege of serving coffee for a talented group of artists in Pacific Grove, CA for @christhile's Acousticamp. Over the course of 4 days, we sat in on inspiring music masterclasses and jam sessions, cocktail courses, and many an oceanside sunset. We even had the chance to teach our own coffee tasting classes between daily coffee service. The days are getting shorter, and the evenings chillier...which means our cafes are ready for fall seasonal drinks. We have 3 new drinks on our menu, returning from fall menus past. First is the Coco Cobán, a spiced mocha that incorporates a rare, uniquely sweet and smoky Mayan pepper called chile cobán, paired perfectly with cinnamon, nutmeg and indulgent dark chocolate ganache. Next is the Banana Stand, taking the classic flavors of banana bread and transforms them into a cappuccino. This drink is full of caramelized banana flavor, warm baking spices, topped off with a dusting of cocoa powder, and served with a Biscoff cookie. Lastly is Mulled Magic, a fun play on the senses that will have you saying “I can’t believe it’s not cider…“. Although the recipe doesn’t use apples, the combination of cascara, cinnamon, and malic acid recreates the experience of drinking a comforting mulled cider with a lightly caffeinated kick. Mauricio Perez Bravo began coffee farming 28 years ago, when he acquired his cherished piece of land in Tectictán, Huehuetenango, Guatemala. As a symbol of happiness, he affectionately named the farm “El Divino Ni?o,” or The Divine Child. Mauricio’s coffee shines with vibrant sweetness and acidity, with notes of tart raspberry, papaya, and cane sugar. Look for it in cafes this weekend, and on our website today.
