With Thanksgiving on the horizon, here's another recipe from our team! This time, Kate, our graphic designer, shares her recipe for mac & cheese. She says, "it's the perfect compliment to all of those veggies, stuffing, and turkey on the table! Plus, it's a nice hearty dish to have on hand for any vegetarians you might be hosting". INGREDIENTS: ? 1 lb Elbow Macaroni, cooked al dente, set aside. Cheese Sauce (Bechamel) ? 2 tablespoons unsalted butter ? 2 tablespoons all-purpose flour ? 1/4 cup finely chopped yellow onion ? 3 cups whole milk, lactose-free ? 1/4 teaspoon ground white pepper ? Pinch of cayenne ? Salt and pepper to taste ? One, 360g bag of shredded cheddar cheese, lactose-free Topping: 1 cup crushed Ritz Crackers 3 TB butter, melted METHOD: Preheat your oven to 380 degrees F. The Sauce: In a medium-sized pan over medium heat, melt the butter, and when it starts to froth, add the onion and flour. Stir often, and cook to golden brown (about 10 minutes). Slowly add about 1/3 of the milk—it will thicken quickly so keep stirring! Add the remaining milk and stir often until thickened and coats the back of a wooden spoon and is no longer translucent (about 10 minutes). If you have an immersion blender, blend the sauce until smooth. Remove from heat and stir in your spices and cheese. Season to taste with salt and pepper. The Topping: In another bowl, Combine the crushed ritz crackers with melted butter. Set aside. Put it All Together! Dump your elbows into a large bowl big enough to mix them with the sauce. Transfer the mixture to a baking dish ( I used a 9x13-sized dish). Sprinkle the cracker and butter mixture evenly across the top. Bake for about 20-30 minutes or until the edges become bubbly and the topping is golden brown. Remove from oven and let it rest for about 20 minutes before serving.

With Thanksgiving on the horizon, we've reached out to staff to ask them to share their favorite recipes! This one that goes back at least three generations in the DeBruyckere family. We've expanded upon the original handwritten notecard, as seen here! Cherry Nut Cake Ingredients: 2 3/4 cups sifted, All-Purpose flour 1 3/4 cups sugar 4 tsp. baking powder 1 tsp. salt 2/3 cups vegetable shortening 1/3 cup Maraschino cherry juice (from the jar of cherries) 2/3 cup whole milk 16 Maraschino cherries, cut into eigths 5 egg whites (2/3 cup, unbeaten) 1/2 cup chopped walnuts Glaze: 2 cups sifted confectioner's sugar 2-4 tablespoons milk, half and half, water, or flavored liquid of choice 1 teaspoon vanilla extract 1. Pre-heat your oven to 350 degrees 2. Grease and flour a bundt pan, and set aside. -- this next part can be done with a handheld electric mixer or in a stand mixer, your call!-- 3. Sift all of your dry ingredients (from flour to salt as listed above) into a mixing bowl 4. Add the shortening, cherry juice, milk, and cherries to this bowl and mix on medium speed for about two minutes. 5. Add your egg whites and beat for an additional two minutes. 6. Fold in the nuts 7. Pour the batter into your bundt pan, and bake in the middle of your oven for about 30 minutes, or until done. You'll know that it's ready to come out of the oven when you insert a cake tester or toothpick and it comes out clean. 8. Allow the cake to cool in the pan for about 20 minutes, then flip the cake out onto a cooling rack to cool completely. 9. For the glaze: whisk together sifted powdered sugar, and vanilla extract, and add enough liquid to thin the glaze to your desired consistency for pouring over the cake. Optional: top with sprinkles or other candies
