Leanpath's Tom Mansel on food waste forensics!
Reviewing food waste data from a Leanpath customer programme, I am always drawn to the images our Trackers take and the story that each tells, like these cut bread slices. I call it 'food waste forensics', and for me it's a helpful metaphor because where some might just see bread slices, others can see the sequence of purchasing, prep and service decisions that go into that waste. Think of each image as a mini crime scene that needs to be solved. The culprit in this case was brand standards; these slices had to be out on the counter to make it look... plentiful. Food waste forensics is a worthwhile discipline to learn because this kitchen is open around 230 days per year, so if that bread is wasted daily it amounts to half a tonne and £750 across the year. That's a plentiful amount to reduce. #foodwaste
