    Reviewing food waste data from a Leanpath customer programme, I am always drawn to the images our Trackers take and the story that each tells, like these cut bread slices. I call it 'food waste forensics', and for me it's a helpful metaphor because where some might just see bread slices, others can see the sequence of purchasing, prep and service decisions that go into that waste. Think of each image as a mini crime scene that needs to be solved. The culprit in this case was brand standards; these slices had to be out on the counter to make it look... plentiful. Food waste forensics is a worthwhile discipline to learn because this kitchen is open around 230 days per year, so if that bread is wasted daily it amounts to half a tonne and £750 across the year. That's a plentiful amount to reduce. #foodwaste

    Last April, UPMC Somerset's Food and Nutrition team launched Leanpath, a program designed to significantly reduce food waste in large kitchens. By tracking food waste, the program offers solutions to cut landfill deposits and greenhouse gas emissions while saving labor and food costs. This involves daily tracking, data monitoring, and using results to engage employees to drive reduction efforts. Since its launch, UPMC Somerset has saved over 2,500 pounds of food from landfills, equivalent to nearly 2,200 meals, and prevented eight metric tons of carbon dioxide emissions. Overall, food waste has been reduced by 51%. In addition, UPMC Somerset will soon offer six plant-based meal options for patients. The new items span breakfast, lunch and dinner, and include options such as blueberry pancakes, shepherd’s pie, vegetable carbonara, Mediterranean veggie burritos, southwest chimichangas and enchiladas. Recently, employees sampled the new menu items and provided feedback before the official launch. "UPMC Somerset is excited to partner with the UPMC Center for Sustainability to champion environmental awareness in our hospital,” said Jeanette Croner, UPMC Somerset’s director of Quality. “UPMC is known for world-class healthcare, and now part of that care at UPMC Somerset includes providing healthy, environmentally friendly plant-based food alternatives for our patients.”

    Big food waste success from Sodexo in Amsterdam! Here's a translation: "2025 starts well! Our kitchen team at the Edge West location in Amsterdam won the Sodexo Waste Watch Challenge at the beginning of this month, with more than 71% less food waste in 3 months!    Our daily routine. Sodexo chefs record food waste every day with Waste Watch by Leanpath and analyze the causes. For example, we record waste data with special scales, take immediate action and encourage everyone to change behavior. Not only our own employees in the kitchen, but also our guests.    Result?  Our customers' food waste reduces on average by 50% within 1-2 years. For example, with this approach we will have prevented 5.8 tons of food waste at UWV in 2023 and reduced 40 tons of CO2 emissions.   What's in it for our customer? 1) Preventing food waste is the number 1 solution against climate change 2) Less food waste = lower costs = more efficient inventory management 3) Your sustainable image becomes stronger through concrete actions against food waste   Thanks to all our Waste Watch teams!
