Thanksgiving edition part 1: SIDE DISHES. Recipe Tuesday: Bring a taste of Kripalu to your Thanksgiving table. Our Baked Winter Squash with Honey & Walnuts is the perfect dish to savor the flavors of fall. With tender roasted squash, drizzled honey, and a sprinkle of crunchy walnuts, this recipe brings comfort and nourishment to every bite. Packed with nutrients and rich autumnal flavors, it's ideal for cozy gatherings. Serves 4-6 people. 3/4 cup walnuts 2 tablespoons honey 1 tablespoon rapidura or sucanat 6 cups winter squash, peeled and cut into large cubes 2 tablespoons extra virgin olive oil Pinch of salt Pinch of cinnamon Preheat oven to 350 degrees. Mix the walnuts with ? tablespoon of the olive oil, 1 tablespoon of the honey, and the rapidura or sucanat. Spread the walnuts on a baking tray and bake for seven to nine minutes, until they are toasted. Remove from the oven and allow to cool, loosening them from the baking sheet as they cool. Turn oven temperature up to 375 degrees. Toss the squash with the remaining 1? tablespoons of the olive oil, the salt, and the cinnamon. Place in a baking dish with 2 tablespoons water and cover. Bake for approximately 30 or 40 minutes, until squash is tender; the baking time will depend on the type of squash and the size of the cubes. Today finds us at the midpoint between fall equinox and winter solstice, a powerful day in many cultures. This day is honored in Celtic culture the festival of Samhain (pronounced sow-in), marking the end of the harvest season and the beginning of the darker half of the year in the Northern Hemisphere. In Celtic culture, Samhain was has been recognized as a moment when the barriers between the physical and spirit world were more porous. In Mexico, tomorrow is honored at Die de Los Muertos, or “Day of the Dead,” also a time in which connection with the spirits is more possible. On this day, the memory of those who have passed is kept alive with bright and colorful celebrations and offerings at the graves of loved ones.
