Happy to see gurnard included on MSN's recent list of "12 Underrated Types of Fish You Should Try at Least Once." It's definitely one of our favorites! Also known as sea robin, its white meat is flavorful yet still mild and offers a dense, moist texture that holds up well to just about any manner of cooking. Though this fish is found around the globe, the method of harvest is key. Our gurnard is sourced directly from Leigh Fish New Zealand, where it is line caught by small dayboats and harvested by ike jime to ensure sashimi quality.

As ambassadors for Restaurants Care we are pleased to share that today the nonprofit opened a $200,000 disaster fund to kick-start direct assistance to food and beverage workers who have lost their homes, jobs, and stability in the LA Fires. This means anyone in F&B - from restaurants, hotels, and food trucks to catering and event venues - can apply for a one-time grant up to $1,500 to assist with critical needs like housing, food, and clothing as workers begin to recover from this crisis. Grants are awarded based on need and available funds. Applications may be filled out at restaurantscare.org and managers can start an application on behalf of an employee. Stay strong, LA ????
