???? Ready for dessert? Known for his delicious baking, Tristan Howard, Senior Manager, Operations & Talent for New York, has the perfect treat to close out our cookbook series for Hispanic Heritage Month. Tristan’s family hails from Uruguay, and whenever he visits their home in Montevideo, he always leaves with a box of Alfajores. Best served after inhaling a delicious Chivito al Pan, Tristan urges all to devour plenty whenever you can! Grab one (or a few) and enjoy a bite of his home away from home. ??? ? INGREDIENTES 1 cup cornstarch? 3/4 cups all-purpose flour? 1/2 teaspoon baking powder? 1/4 teaspoon fine sea salt? 10 tablespoons butter (unsalted or salted)? 1/3 cup granulated sugar? 3 large egg yolks (yolks only)? 1/2 teaspoon vanilla extract? 1/4 teaspoon almond extract? 3/4 cup Dulce de Leche (my fave brands are Cachafaz or Los Nietitos, or you can make your own!) ? PREPARACIóN Mix the cornstarch, flour, baking powder, and salt together. Set aside. Cream the butter at medium high speed for 1 minute (ideally with hand mixer/electric mixer). Add granulated sugar to butter. Cream for another 1-2 minutes until very fluffy and light in color. Add egg yolks one at a time and mix until combined before adding the next one. Add vanilla and almond extract and mix to combine. Add dry ingredients and mix until you form a dough. Should feel soft and not too sticky. Wrap the dough/bowl in plastic chill it in the fridge for at least 3 hours. Pre-heat the oven to 350F. Roll out the dough until it’s about 1/2 thick over a floured surface. You can roll it out into multiple pieces, depending on space. Using a 2-3 inch cookie/biscuit cutter should yield about 20 cookie sandwiches (40 halves). Place cookies on a baking sheet lined with parchment paper. Bake for 12-15 minutes. Cookies should look set, but not too browned. Let them cool down all the way before filling with the dulce de leche. I placed my dulce de leche in a piping bag to make it easier to fill the cookies. Just a plop in the middle, and when you combine it should fill out to the border. Looking for a tasty beverage? Try this refreshing Horchata recipe from the kitchen of Valerie Calderón, Senior Media Planner for Boston. Inspired by trips back to Costa Rica in her youth, this family favorite brings back memories of warm afternoons and lunches shared with loved ones. Cheers to celebrating culture and creating memories together! ?? Please note that this recipe contains peanuts. It’s also non-alcoholic. INGREDIENTES 4 1/5 cups water 1/4 lb. rice, ground 1 clove 1 stick cinnamon 1/2 teaspoon salt 1 small can sweetened condensed milk 1/4 lb. peanuts (ground) PREPARACIóN 1) Soak the ground rice in the water overnight. The next day, pour rice mixture into a blender. 2) Add cinnamon, salt, and a whole clove. 3) Liquify the mixture in the blender. 4) Strain the mix through a fine mesh strainer into a pitcher. 5) Stir condensed milk and ground peanuts into the strained liquid. 6) Refrigerate until chilled. The next course we’re serving is Tostadas de Tinga from the kitchen of Cristian Martinez Gomez, Associate Designer in Chicago and responsible for the beautiful design of this year’s Hispanic Heritage Month. This meal is quick, delicious and easy to scale up for any size event. We can’t wait to try it! INGREDIENTES: 2 chicken breasts 1 onion, cut in half 1 onion, julienned 4 garlic cloves, whole 2 garlic cloves, finely minced 2 Roma tomatoes 1 small can chipotle peppers in adobo sauce 1 pack Tostadas 1 tbsp. avocado or olive oil Salt to taste TOPPINGS: Sour cream Mexican crumbling cheese (queso fresco or queso cotija) Shredded lettuce Avocado, sliced or in chunks Optional: refried beans PREPARACIóN: Bring small pot of water to boil and add chicken breasts, half an onion, 2 garlic cloves, and a hefty pinch of salt. Lower heat to medium-low and boil for 15-20 minutes or until chicken is cooked through. Once chicken is cooked, remove from pot and shred—clean hands or two forks works well. Reserve 1/3 cup of broth and dispose of the rest along with boiled onion and garlic. Blend tomatoes, 2 garlic cloves, half an onion, entire can of chipotle peppers with adobo sauce (for less spicy, use only ? can), the reserved chicken broth, and a pinch of salt. In medium pan over medium heat, add tablespoon of oil. Once glistening, add julienned onion and minced garlic. Cook for 3-5 minutes, stirring constantly. Add shredded chicken and blended sauce to pan, stirring to mix together. Allow sauce to reach boiling point. Reduce heat to medium low and cook uncovered for 15-20 minutes until most liquid has evaporated, and the sauce has reduced, stirring occasionally, then remove from heat. Taste for salt and add as needed. To assemble: Spread some sour cream on a tostada, add the Chicken Tinga, shredded lettuce, slices or chunks of avocado, and top with crumbling cheese.
