Elcio Zanatta didn't start Aubergine Kitchen until he was 55 years old. Now at age 66, they have 14 locations. Here's how he did it: 1 - Be different I've learned that good strategy is 'differentiated strategy', but have made the mistake of trying to be different for the sake of different. Instead, Elcio chose to be different because what he wanted didn't exist, so he created it. 2- Chose what you wont bend on, be flexible on everything else Elcio hired a consultant who said, "you can either be profitable, or you can be right, but you can't be both". Elcio rejected that piece of advice from the consultant and decided to: -keep the extra virgin olive oil (instead of canola oil for 1/8th the cost) -stay with pure vanilla (instead of artificial vanilla flavoring at 1/12th the cost) -not serve fried food (the highest margin food product for restaurants) -not serve soda (the highest margin of all items for restaurants) 3- Be obsessed (if you aren't, no one will be) Elcio treated us to lunch at his Draper location after the podcast. While we waited for our food, he checked in with his employees, took photos of designs he wanted to be different and shared his thoughts with his people.
