Founded in 2004, the Grain Foods Foundation is a joint venture of members from the baking and milling industries and allied?suppliers. As Americans have been inundated with often conflicting and sometimes suspect nutritional advice, healthy doses of fact-based information and common sense are sorely needed. The Foundation is committed to nutrition education programming that is firmly rooted in sound science, working together with its Scientific Advisory Board, a multidisciplinary cross section of nationally recognized nutrition and healthcare experts.

    #Grainfoods to the rescue! Unfortunately, 95% of Americans do not meet fiber intake recommendations (which is 38 grams per day for men and 25 grams for women, according to The Institute of Medicine). Luckily, grain foods account for the largest source of fiber in the diet of most Americans, and grains and grain-based foods provide more fiber than fruits and vegetables! Fruits offer about 10% of fiber consumed and vegetables provide about 16% fiber, compared to the 40% fiber that grains offer. Plus, grain foods often serve as a vehicle to getting more fruits and vegetables onto the plate (and more plant fiber into our diets). Win win!   • Whole grains are a hot topic, but what’s all the talk about? Well, it all starts in a field where whole grains grow as the kernel of the plant. The kernel is made up of three distinct parts, each offering a unique nutrient profile. The bran contains satiating fiber along with essential vitamins and minerals. The endosperm stores starch – a carbohydrate that serves as a source of energy. The germ houses vitamin E, antioxidants and healthy fats. Any food that is labeled “whole grain” on the package must contain all three parts of the kernel in roughly the same proportion as they occur naturally. What’s my family’s?COZY COMFORT? My Whole Grain Banana-Chocolate Chip Pancakes! RECIPE Serving size: 2 pancakes plus 1 tablespoon syrup 1 cup unbleached all-purpose flour 1 cup whole wheat pastry flour ? cup granulated sugar 2 teaspoons baking powder ? teaspoon salt 2 large eggs ? cup canola oil 1 cup nonfat milk 1 cup nonfat plain Greek yogurt ? cup dark chocolate chips 2 medium bananas Cooking spray ? cup pure maple syrup 1.??????In a medium bowl, sift together the all-purpose flour, pastry flour, sugar, baking powder, and salt. Set aside. 2.??????In a large bowl, whisk together the eggs, canola oil, and milk. Add the yogurt and whisk to combine. 3.??????Add the dry mixture to the yogurt mixture. Stir to combine, taking care not to overmix. Fold in the chocolate chips. 4.??????Cut the bananas into ?-inch-thick rounds. 5.??????Spray a large skillet with cooking spray and heat it over medium heat. For each pancake, drop a heaping ? cup of the batter into the skillet, and sprinkle 2 or 3 banana slices on top. Repeat, leaving about 2 inches between pancakes. Cook until the tops are bubbly and the edges are set, 2 to 3 minutes. Flip the pancakes over and cook for another 2 minutes, until golden and crisp. Transfer to a plate and cover with aluminum foil to keep warm. Repeat with the remaining batter and bananas. 6.??????To serve, place 2 pancakes on each of eight plates and drizzle 1 tablespoon of maple syrup over each stack.
