Gilman Cheese has been deep rooted in central Wisconsin since 1948. We specialize in premium quality, shelf-stable, processed cheese that is as close to natural as possible with all the benefits of being processed. We only use premium natural cheese, with no added oils or fillers. Our primary industries include the gift pack, retail and airline industries, where we work to provide them a variety of shapes, sizes and flavor profiles. Our high quality, 98% natural product is shelf-stable for up to twelve months without any need for refrigeration. From 0.75oz planks to 42lb bricks, we have a product that can meet any of your needs. We also make a refrigerated product if that better suits your needs.

On Thursday August 8th four of our team members traveled to the Wisconsin State Fair in Milwaukee to attend the Blue-Ribbon Dairy Products Auction put on by the Wisconsin State Fair Dairy Promotion Board. We received recognition and our award-winning cheese was auctioned off to raise money for student scholarships and dairy promotion. Our cheese was purchased by Dairyland Packaging. They paid $50/lb. for 24lbs raising $1,200 for the event. This year the auction raised a record breaking $65,080! Our team members that attended were Alexia Glaus, Amy Flatten, Sheryl Escobar, and Jessica Gilbert.

Three of our employees take part in a local non-profit organization called Team Aubree. We have teamed up together to recycle clean plastics here at the plant. Team Aubree members work as a team to gather, sort, and haul the plastic to a company called Nextrex. Nextrex takes all of the donated plastic and uses it to make benches. It takes 1,000lbs of donated plastic to make 1 bench. Team Aubree started the plastic collection in hopes of creating benches to add to the surrounding communities or donating them to benefits, parks or charities. Each bench has a plaque on it stating who donated the plastic. Below from left to right is our three employees who are a part of Team Aubree: Adam Letendre, Ashley Bates, & Karen Heuer. They are pictured with the bench they donated to Gilman Cheese. Thank you for making a difference in our communities!
