Making hard kulfi, a traditional Indian frozen dessert, requires a specific process to ensure the right texture and flavor. Here’s a basic recipe to guide you: ### Ingredients: - **1 liter full-fat milk** - **1/2 cup sugar** (adjust to taste) - **1/4 teaspoon cardamom powder** - **2 tablespoons cornflour** (optional, for extra thickness) - **2 tablespoons chopped nuts** (almonds, pistachios, cashews) - **A pinch of saffron strands** (soaked in warm milk) - **2 tablespoons of khoya (optional)** ### Instructions: 1. **Boil the Milk:** - Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat. Once it starts boiling, reduce the heat and let it simmer, stirring occasionally, until the milk reduces to about half its original volume. This may take about 45 minutes to an hour. 2. **Add Sugar and Flavorings:** - Add the sugar and continue to simmer until it dissolves completely. - Stir in the cardamom powder and saffron strands (including the milk in which they were soaked) for an enhanced flavor. 3. **Thicken the Mixture:** - Mix cornflour with a little cold milk to make a smooth paste and add it to the simmering milk. Cook for another 10 minutes until the mixture thickens to a custard-like consistency. - Add khoya if you're using it, which adds richness and density to the kulfi. 4. **Add Nuts:** - Stir in the chopped nuts and mix well. 5. **Freeze the Kulfi:** - Allow the mixture to cool slightly before pouring it into kulfi molds. - Cover the molds with aluminum foil or lid and insert an ice cream stick in the center of each mold. - Freeze for at least 6-8 hours or overnight until the kulfi is fully set. 6. **Demold and Serve:** - Before serving, take the molds out of the freezer and run them under warm water for a few seconds to loosen the kulfi. - Gently demold the kulfi and serve immediately, garnished with additional chopped nuts if desired. ### Tips: - **For a creamier texture**, you can add some condensed milk to the mixture. - **Adjust sweetness** according to your preference before freezing. - **If you prefer a firmer kulfi**, reduce the milk even further, or add a bit more khoya to the mixture. Hard kulfi has a dense and creamy texture, different from regular ice cream due to the absence of eggs and less air incorporation, which makes it a truly indulgent treat.
