The Frozen Dessert Center (FDC) at Babcock Hall, founded in fall of 2012, combines the frozen dessert expertise and resources housed within the University of Wisconsin - Madison, Food Science Department. We also have the resources of other areas within the university to call upon for additional assistance should our client’s needs require that. We are committed to assisting the Frozen Dessert Industry with various services: Development?- Work with companies to design trials Trials?- Small and large-scale mix and frozen product trials Data/Reports?- Microstructure and sensory analyses and reports Overall?– Helping companies carryout projects from ideas to actual legal products Education?– Develop resource materials to educate the public and industry regarding food safety, good manufacturing practices, sanitation and general information regarding frozen desserts Extension?– Through the CALS (College of Agricultural and Life Sciences) Outreach Services we assist with several short courses related to Dairy Foods manufacture, sanitation and chemistry

Excitement is Building for Day 2 of the 2024 Annual Technical Conference at the Frozen Dessert Center on October 22! ??Following up on our last post, here’s a deeper look at what you can expect from Day 2 of the conference! ??Highlights on October 22nd: ?? From Ice Stream to Ice Cream – Prof. Marianne Haseloff (Glaciology Group, UW-Madison) will open the day by drawing fascinating connections between glaciology and ice cream structure, offering new perspectives on ice deformation. ??? Meltdown, Shrinkage, and Polyphenols – Professor Richard Hartel (FDC/University of Wisconsin-Madison)?will provide an update on the studies conducted by our research group over the past year. ?? Darin Dye and Pavlos Kouroutsidis (Tetra Pak) will explore how homogenization techniques affect the texture and stability of ice cream. ?? Complying with FDA's Traceability Rule – Roberta Wagner (International Dairy Foods Association - IDFA) will share key considerations and potential challenges in meeting the FDA's traceability regulations, critical for ensuring food safety in frozen dessert production. ?? Food Safety Case Study – Brian Kellerman (Kellerman Consulting) will present a real-world case study on frozen dessert safety, offering practical insights for maintaining high standards in production.
