UW Registered Dietitian Nutritionist and FSNH Clinical Instructor Judy Simon highlights the nutritional benefits of the sweet potato in this recent New York Times article. Simon says, "Unlike a sugary beverage, sweet potatoes are relatively high in dietary fiber (about four grams per potato). Fiber is a lot of work for the body to digest, which slows down the breakdown of sugar. High-fiber foods, including sweet potatoes, can even boost the body’s production of GLP-1, the hormone that drugs like Ozempic and Wegovy mimic," said Simon. Miki Suarez-Thai (MPH/GCPD) knew they wanted to work in public health nutrition after being involved in soda tax research during their undergrad at UC Berkeley. ?The MPH-Nutrition degree program in the University of Washington School of Public Health offered them the combination of education, experience, and connections to work in that setting. In the future, Suarez-Thai wants to work with communities and developing and implementing programs to support food access and health. "Nutrition is a key part in the prevention and management of chronic diseases which make up some of the leading causes of death in the United States such as diabetes, cardiovascular disease, and kidney disease. I believe there has been a lot of work done in medicine for the treatment of these diseases, and I hope that more work will be done in public health nutrition for their prevention. Mariam Kayali is a second year UW student in the MPH-Nutrition and GCPD programs in UW Food Systems, Nutrition, and Health. Mariam has discovered a deep interest in pediatric nutrition, clinical practice, and helping families improve chronic health conditions. "When I started this program," said Kayali,"I was set on working on a policy or systems scale. While that’s still a strong interest of mine, my coursework has really highlighted my enjoyment of clinical practice. I’ve discovered a deep interest in pediatric nutrition because I’ve come to appreciate early life as a critical intervention point for both nutritional security, overall health, and in equity building."?? Join our vibrant and growing faculty team at the University of Washington's Food Systems, Nutrition, and Health program in the University of Washington School of Public Health. ? We’re looking for an assistant teaching professor, a full-time, 12-month faculty position for a passionate leader ready to inspire and guide change in food systems, nutrition, and health. Within this position, you will help build curricular capacity by teaching existing undergraduate food systems, nutrition, and health courses, develop new courses, mentor experiential learning projects, and play an active role in program, department, and school governance. Areas of interest include, but are not limited to food policy, food systems, food justice and equitable food systems, food systems modeling, entrepreneurship, nutrition, population health, and promoting food systems that support environmentally sustainable and healthy food choices. Congrats to UW Husky Logan Ullrich who earned a silver medal in the Men’s 4- event in rowing at the Paris Olympics! Ullrich is a UW alum (‘23) who majored in Food Systems, Nutrition, and Health and is one of 11 rowers from UW to earn medals this year, an all-time program record for University of Washington Rowing.
