We had a blast at the #CateringWorkshop. Thanks so much to the teams at Off Premises Growth Academy and Networld Media Group for throwing a great event. Here are a few takeaways. Most of these were seeded in Erle Dardick's keynote and echoed throughout the conference. The keynote was authentic, relatable, fun, and informative. 1. In the pandemic, Sodexo & Aramark closed down their “corporate kitchens” and NEVER reopened them - huge opportunity for restaurants to fill the gap! —> Jason’s Deli did a single $1.5million order this year, and needed 120 locations to fulfill it!??? 2. What does the math look like for 125 unit chain? —> $42Million = 125 units X 48 weeks X 5 days per week X $14 average per person X 25 people per average order X 4 orders per day per location??? 3. CTOs are building all their technology infrastructure to “talk to” their POS systems —> however POS systems were primarily designed for on-prem, and secondarily for off-prem (i.e. delivery, let alone catering)? —> In fact, POS systems are getting in the way of scaling your catering business, they don't have the integrations with catering marketplaces, catering fleets, prep sheets to different teams, and other critical workflows. ?? 4. Catering is not a project, it is a whole new business unit and should be invested in accordingly —> Will the Chief Catering Officer please stand up????♀? 5. Scaling Catering doesn’t require a POS — it requires an ERP System — Enterprise Resource Planning —> Don’t be surprised to see ERP systems becoming a new slice of the Food-Tech Landscape????? 6. Catering is a great way to show off your hospitality —> Pick up the phone, do the delivery, show clients who pay big money that you care, and they'll keep coming back for more ???? ??♂? Holy goop! The Food On Demand show this year was the best one yet. It was our 4th time exhibiting. Hats off to Jared Pfeifer, Bernadette Heier, and the whole team for making it happen Here are the top 5 takeaways we got from the show ?? : 1. ?? Virtual Brands can work, but… It needs the right mix of high quality food, 2. a good delivery experience 3. And the “right” Influencer to get inertia. MrBeast Burger alone isn’t enough. Hats off to Gwenth Paltrow and the whole goop Kitchen team and CloudKitchens 2. ?? Every brand wants customers to order direct, but… When an issue happens, they want the customer to call Doordash or Uber. This is due to 2 key factors - 1. They lack control over the delivery experience; 2. They don’t have the tools to be proactive or reactive to customer issues. 3. ?? Restaurants can get their customer data and use 3rd parties as “lead generation” and still have DoorDash and Uber fulfill their deliveries, but.. Restaurants don't seem to care enough? 4. ?? The best way to grow deliveries is to reduce “defects”, but.. Restaurants and technology providers largely only solve issues after the fact (if at all), rather than preventing them in the first place.?Great point Travis Kalanick. 5. ?? As delivery grows post-pandemic the relationship between restaurants and 3P is contentious but.. Everyone is at the table to figure out how to pave a path to a future with happy P&Ls and happy diners.
