EatDenver is a nonprofit membership organization that connects and empowers our regional independent food and beverage community. Our work includes hosting monthly industry education programs and facilitating opportunities for professional development, fostering collaboration within the industry through a digital membership platform and networking events, marketing independent restaurants through headline events and social media, and advocating on a local and statewide scale for the needs and values of an inclusive and equitable food and beverage community. Since 2006, our membership has grown to over 380 regional and independent food and beverage concepts, including restaurants, bars, coffee shops, breweries, bakeries, food trucks, and food hall stalls. Guided by a belief that a rising tide lifts all boats, the foundation of our organization is in creating a resilient community of owners, operators, chefs, managers, and staff.     Bienvenido a EatDenver, Convivio Café ????? Convivio is Denver’s first women and immigrant-owned, Guatemalan-inspired, bilingual café whose mission is to connect seed to cup to community. Socias (owners), Kristin Lacy and Vivi Lemus, combine backgrounds in coffee retail, agricultural development, chef’ing, food justice, and immigrant rights advocacy to build relationships with Guatemalan farmers and the community, opening Convivio’s doors in 2022. From 7am daily, the Northwest Denver café serves favorites like Café con Leche and Atol Azul (sourced directly from Guatemalan farmers), and antojitos (small plates) like Tostada Trio and champurradas.
