Meet Brianna Theus RD, CDN She is a black, Haitian American registered dietitian. She currently owns a private practice where she works with individuals who struggle with their relationship with food, specializing in eating disorders and disordered eating. She helps her clients navigate food through neurodivergence and has a deep focus on Black, Indigenous, and Folks of Color to provide affirming care. Brianna has special interests in social justice and nutrition, neurodivergence and nutrition, and how religion can impact nutrition. Brianna is currently working on a neurodivergent friendly cooking course geared towards folks in eating disorder recovery who struggle in the kitchen. Brianna is based in Connecticut and lives with her husband and two cats, Fred and Miso. Soul food is more than just a collection of dishes; it's a vibrant tapestry woven from African culinary traditions, the ingenuity of enslaved people, and the resilience of the African American community. It's a taste of history, a celebration of family, and a testament to the power of resourcefulness in the face of adversity. Originating from the ingenuity of enslaved Africans in the American South, these dishes have evolved, blending West African, Caribbean, Indigenous American, and European influences to create something uniquely comforting and delicious. Black-eyed Peas: Traditionally flavored with ham, a healthier approach would be to cook them with turkey bacon and/or aromatic spice blends and a rich vegetable broth. Rich in protein and fiber, they’re a hearty, healthy staple. Mac and Cheese: Traditionally made with lots of high-fat butter and cheeses, a healthy take would be to cook the dish with whole-wheat pasts, low-fat cheese, and pureed butternut squash for creaminess and a nutritional boost. Collard Greens: Traditionally simmered with pork, a healthy take might be to include smoked turkey or flavor the greens with a robust seasoning blend that includes smoked paprika (or liquid smoke) for a hearty flavor.
