"Exotic dishes, ingredients, and shareable cocktails and drinks encourage connection, while the artwork and photographs on the walls suggest intimate and personal moments caught on camera and the space encourages romance with deep booths, cozy two tops, and a dreamy back room with a gallery wall of couples in frames." What an awesome list. It's an honor to be among such great bars and restaurants celebrating love in Denver! "Another way fun activity this Valentine’s is a trip to the vibrant and eclectic neighborhood or the River North Art District (RiNo). Characterized by its street art, converted warehouses, craft breweries, food halls, new restaurants and art galleries, RiNo has a cool and industrial-chic atmosphere, perfect for spending a chill Valentine’s Day." The conversation on Dry January continues with our award-winning Beverage Director, Emily Nevin-Giannini: Q: What are your thoughts on "Dry January?" A: The truth is: Dry January is a great way to initiate a conversation on alcohol content— how much, how little, when and how. I’ve found myself looking for moments of No, and Low, and I’ve also had moments of not thinking about it at all. Our program embraces all of those choices, not just for a month but year-round. The problem with Dry January is that it pushes a pretty all-or-nothing conversation. The best part about the month is that it gives more people the express permission to hang out and dine at bars and restaurants without the pressure to imbibe: we’ve got all the options in all the glassware so no one is on the “out” (except for the ABV). #corsicawinebar #alcoholfree #dryjanuary

Ahead of Dry January, we caught up with Beverage Director Emily Nevin-Giannini to talk about the month, her picks, the sincerity of mocktails, and how she’s leaning in or out of the “Dry Movement.” What does an award-winning beverage leader think of kicking alcohol out for 31 days? Q: A Wine Bar & Dry January don’t seem very aligned. Are they? A: Ha! I totally understand why someone would ask that. When you’re known for your wine and cocktail program it sounds oppositional to talk about NOT drinking for a month. The reality is that a great beverage program is meant to help everyone have a really good time, and over the years we’ve realized that having options with and without alcohol was the best way to do that. The point is the fun; and options make that easier for everyone. Q: Are cocktails without alcohol still cocktails? A: They can be, but they have to be approached as cocktails & not just mixed juice as some “mocktails” often are. An NA cocktail can be just as complex, nuanced, and thoughtfully crafted as those with alcohol, but they have to be designed intentionally to balance the elements that are absent. Non-alcoholic drinks have always been a big part of our beverage program. The Espresso Tonic, Chenille and Raspberry Beret are on our menus all year round. We'll continue the conversation with Emily later this week! #corsicawinebar #alcoholfree #dryjanuary

"One thing we noticed about Corsica — much like its Mediterranean dining roots — is that it’s not an eatery in which meals are encouraged to be rushed. Many of the parties that came in before we did were still dining and sipping wine throughout the evening, clearly enjoying every moment of the experience." "Corsica's Mediterranean-focused wine list is equally impressive, with several varietals directly from Corsica along with the usual suspects (Italy, France, and Spain). There are even a few selections from under-the-radar wine regions like Stajerska (Slovenia), Santorini (Greece), and Dalmatia (Croatia). All in all, there are around 200 wines sold by the bottle and around 30 available by the glass." Thank you for the feature, Tasting Table! https://bit.ly/4eoyXI1 #corsicawinebar

"An evening at Corsica is all about escapism: drawing from European social dining traditions with flavors from the Ligurian coast combined with Proven?al customs and a heavy focus on apéro, small plates, and shared dishes, guests entering the dining room feel like they’ve stepped into another world."
