There’s something really special about walking through a local farmers market, knowing the meal you’re about to create for others begins with these wholesome ingredients. Last week, General Manager Suzanne Gaudrault had the pleasure of gathering produce and protein from the Bar Harbor Farmers Market, chatting with the farmers who had pulled the greens from the soil just that morning and buying crabmeat from a local fisherman who had been out on the water at dawn. Suzanne then handed off the local finds to Executive Chef Chuck Boyle, and what he created was pure magic. The first course was a fresh salad with mixed greens, grilled apples, pumpkin seeds, and goat cheese—simple, yet bursting with the flavors of the season. The entrée was a beautifully tender beef tenderloin topped with a crabmeat orange sherry sauce, accompanied by russet potatoes, oyster mushrooms with shallots, brussels sprouts, and asparagus. To finish, they served a pumpkin cheesecake with pecan maple and Jack Daniels sauces that captured the essence of fall. It’s moments like this that remind us how powerful local and seasonal ingredients can be—not just for the plate, but for the community.
