We opened our first location in Columbus, Ohio in 2014. Our goal was to create a relaxed hangout spot, where people could enjoy good food without breaking the bank. Since then, we've added locations in Columbus, Pittsburgh, Indianapolis, Cleveland and Cincinnati ... With more on the way! We specialize in build-your-own tacos, served alongside unique queso, guacamole and margaritas creations. We pride ourselves on fresh, high-quality ingredients, as well as salsas, toppings, proteins and tortilla chips that are all made from scratch daily. Our aim is to offer enough yum for everyone!

Meet Jan Stewart, our talented Vice President of Food Operations, who has been shaping flavor and innovation at Condado Tacos for the past 8 years! Jan began as a Kitchen Manager at our first location, Short North in Columbus, and quickly became a key player in shaping operations for what it is today. From collaborating on restaurant design to building our commissary, Jan has played a pivotal role in developing our systems, hand-selecting equipment, and even masterminding the logistics of delivery. His passion for culinary excellence and creative problem-solving has been essential in bringing bold ideas to life, helping to define what Condado Tacos is today. We’re honored to spotlight Jan’s journey and contributions as we celebrate 10 years of Condado Tacos! We caught up with Jan and dove into his approach to crafting and perfecting our menu. Take a look below and help us celebrate Jan and the incredible impact he has on making Condado Tacos what it is today!?? // Q: As the VP of Food Operations, you’ve been involved in a lot of high-level decision-making. What is your approach to creating and refining the menu, and how do you ensure consistency across locations? A: "My approach to creating and refining the menu starts with staying relevant and keeping up with trends in the food scene. I conduct self-recon in our restaurant spaces and ensure our suppliers are maintaining high-quality standards. I also ensure we're providing on-field team members with the necessary tools and resources is key to delivering consistency in our guests' experiences." Q: What’s your go-to taco build? A: "A peezler shell (flour soft, hard corn, bacon refried beans, guac, but no sour cream), roasted chicken, shredded smoked cheddar, corn salsa, and topped with chipotle honey sauce!" #10YearsOfYum

    ? Employee Spotlight in celebration of Condado Tacos 10th Anniversary! ? Meet Ashley Diaz, our incredible Operational Service Manager, whose journey with Condado Tacos spans an inspiring 9 years! Ashley started as a Server at our Short North location in Columbus and quickly rose through the ranks, becoming a Lead Server and then taking on the role of General Manager at Short North and later Easton. Her career took her to The Banks in Cincinnati, where she became a Senior GM before transitioning into an Assistant Regional Manager role in the Cincinnati market. From there, she took lead as Regional Manager of the Carolinas, ultimately stepping into her current role at our Support Center. Ashley's dedication, leadership, and passion for creating amazing experiences has been integral to our growth and culture. We're so proud to celebrate her journey and the incredible impact she's had at Condado Tacos! ?? We sat down with Ashley to learn more on how each community she's been a part of connects with Condado. What differences or similarities have you noticed in how each community connects with Condado? A: "Every community loves our murals and art. It's always a main talking point when we come into a new community. It's the first thing they see, and it's a way we embrace individuality from the artists to customers." Q: What’s your go-to taco build? A: "A sweet lucy shell (flour soft, hard corn, queso blanco, and guac), roasted chicken, red cabbage, cilantro + onions, smoked cheddar, corn salsa, and topped with cilantro lime aioli!" #10YearsOfYum

    Meet Tre Santamaria: A Condado Tacos Success Story! ?? Tre Santamaria, our Beverage and Culinary Manager, has been part of the Condado Tacos family for nine incredible years. Starting as an Hourly Line Cook, Tre’s dedication and talent has propelled him through roles such as Assistant Kitchen Manager, Kitchen Manager, Back Of House Training Manager for New Restaurant Openings (helping to open 23 locations!), Culinary Manager, and now Beverage and Culinary Manager. From crafting unforgettable flavors to helping shape the growth of Condado, Tre’s journey embodies our commitment to fostering growth and passion within our team.
