Cobram Estate was founded in Australia in 1998 by two friends who wanted to bring terrific olive oil back to the people. Since the beginning, we have become the most awarded olive oil company in the world, with olive groves in California's Sacramento Valley and Australia's Murray Valley. Cobram Estate boasts not one, but two harvests a year. Our olive oil is packed with polyphenols; antioxidants that have been proven to help fight inflammation, aging, and unnecessary weight gain and are also great for your heart. Perfect for any occasion, this cake is a testament to how quality ingredients can elevate your baking. For an added citrus twist use Cobram Estate Lemon Extra Virgin Olive Oil.? Ingredients: 1 1/2 cups (190g) all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 cup (200g) granulated sugar 3 large eggs 3/4 cup (180ml) Cobram Estate Lemon Extra Virgin Olive Oil 1/2 cup (120ml) whole milk 1/4 cup (60ml) fresh orange juice 1 tablespoon orange zest (from about 1 orange) 1 teaspoon vanilla extract Powdered sugar for dusting (optional) Instructions: 1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan or line it with parchment paper. 2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. 3. Combine Wet Ingredients: In a large bowl, whisk together the sugar and eggs until light and fluffy, about 2-3 minutes. Gradually add the Cobram Estate EVOO, whisking continuously until the mixture is well combined and smooth. 4. Add the Liquid Ingredients: Stir in the milk, orange juice, orange zest, and vanilla extract until everything is well incorporated. 5.
