One of the more surprising contributors to climate change is food waste. The U.S. EPA estimates that each year, U.S. food loss and waste equates to roughly 170 million metric tons of embodied CO2 emissions—equal to the annual CO2 emissions of 42 coal-fired power plants. At the same time, approximately 49 million people—that's one in six people in the U.S.—still face food insecurity.
