Over the past year we have been updating our Dairy State Cheese plant to double our production at that site from 1.5 million pounds of milk per day to 3 million pounds per day. With these upgrades, Dairy State will be able to focus solely on parmesan, aging it in our West Chicago facility and then packing it in Bartlett, IL.

Meet Matt Flavin, our newly appointed Director of Corporate Accounts. Matt started at Cheese Merchants in May 2023 but was recently promoted to this critical role managing our national accounts. Learn more about Matt below! Q: Can you describe your new position? A: I manage our national distributors, buying groups, and national accounts across the U.S. I also manage our culinary team of amazing chefs. (Matt is a chef himself!) Q: What do you like most about working at CM?? A: The culture! We have a great group that shares many core values, which is what is driving us to be best in class leader in our [industry]. Q: Favorite cheese? A: Creamy Formaggio; it's new and different. I have been able to find so many uses for it in the kitchen, and it's fun to say! Q: Any fun facts about yourself?
