    Modern ingredient supply chains are increasingly over-extended, leading to diminished yields and shortfalls in demand. Executives from Hersheys and Mondelez have recently prepared consumers for as much as a 50% increase in the price of chocolate on shelf due to the instability of the cocoa supply. We have a built a platform dedicated to finding solutions to these global supply chain problem with the potential to help regionalize ingredient sourcing.     Welcome back to Day 2 of #FutureFoodTech San Francisco! This opening panel is exploring the potential of alt-ingredients, from sugar and cocoa alternatives to next-generation fats and oils, and how they can stabilize supply chains and reduce environmental impact. Gaining consumer's acceptance and trust is proving to be a big challenge, especially as a biotech product. Through partnerships, Nuseed Nutritional has been able to prove that their agricultural product is actually resulting in positive environmental impacts. John Krzywicki, CEO at Checkerspot, highlights that "people have come to respect the approach of being incredibly transparent." And, for companies, "the more that you can accept this and find ways to lean into it the better." Katrina Benedicto, Marketing & Communications Director Nuseed Nutritional agrees and adds that "consumers are not afraid of biotech, they're afraid of what they don’t know."     It's a busy week for the world of food and nutrition here in the SF Bay Area. On top of Future Food Tech, Checkerspot will also be represented at the MISTA Symposium on Healthy Nutrition.     We're here to take a moment and welcome John Krzywicki as Checkerspot's new CEO. As founder and Chief Science Officer Scott Franklin succinctly put it, “he’s the right person at the right time.” John’s leadership follows a string of successful laboratory and commercial developments at Checkerspot in the food and nutrition spaces, which John helped lead, including the creation and rapid growth of Spotlight?, a division of Checkerspot which develops cooking fats and oils using our platform technology. In less than a year Spotlight? Algae Oil, including a strategic partnership with Algae Cooking Club, have become some of the best selling alternative oils in the culinary world, and are now staples in a number of Michelin-starred kitchens.     At AAK, we're exploring the future of fats and oils through innovative approaches, such as precision fermentation, which uses microorganisms to produce specific ingredients such as fats and oils, enzymes, natural pigments, and vitamins. By harnessing these novel techniques, we're seeking to transform industrial or agriculture leftovers into sustainable, high-quality fats and oils.     With the Holiday here and the culinary heroes of the house ready for action, have you thought about upping your culinary game this season? Sunset Magazine recently featured Algae Oil as “having a moment with chefs and home cooks alike”. Behind the counter, chefs across the country are now reaching for Spotlight Algae Oil available in nationwide food service distributors, while if you’re looking to add some pizazz to your home cooked Holiday menu, look no further than Algae Cooking Club. Sunset declares, “Algae oil is appealing to home cooks and chefs for its high smoke point, which allows it to handle high-heat cooking methods like frying and sautéing without breaking down, unlike some oils that can turn bitter at higher temperatures. Its stable emulsion properties make for sauces, dressings, and dips that won’t break. Plus it’s nearly completely neutral.” And beyond the performance benefits, “algae oil has approximately 50% of the carbon footprint of avocado or canola oil and uses 80% less land to produce a cup of oil than sunflower or other common culinary oils.” says Checkerspot’s SVP of Strategy, John Krzywicki.
