Recently, we've been re-sharing our classic YouTube series CUTTING CHAI on our Instagram. It follows Meherwan Irani and his "Carolina Boys" (Daniel Peach, Mikey Files, and James Grogan) on a journey exploring the vibrant food culture of India. Eight years after it debuted at the Atlanta Film Festival, we still use this series to help immerse our restaurants teams in the culture and foodways of India.

It all began with a little chaat house in downtown Asheville, NC. In 2009, at the bottom of the great recession, Meherwan and Molly Irani quit their day jobs to open their first restaurant, an Indian street food joint called Chai Pani that was funded by family and friends. On opening day, Chai Pani ran out of food. In 2022, it was named the most Outstanding Restaurant in America. With Chai Pani, the Iranis introduced the American South to the colors, flavors, and soul of India. Totally obsessed with the deliciousness and interactive experience of Indian street food — India’s most democratic, egalitarian, affordable and pan-Indian cuisine — Meherwan wanted to recreate that in his own approachable way. He and his team believe that Indian food is so much more diverse, interesting, unexpected, and personal than a handful of regional cuisines that have been popularized in the U.S. so far. Guests quickly craved the stereotype-shattering food, the kale pakoras and sloppy jais, the drinks and hot chai, and the warm service at Chai Pani. This first-of-its-kind establishment has been recognized as sparking a revolution and changing the perception of Indian food in America. Meherwan and Molly now lead a team of more than 300 across their growing restaurant and spice empire in the South’s most essential culinary cities: Asheville, Atlanta, and Charlotte. Our hometown of Asheville, and the entire Western North Carolina region, have been completely devastated by Hurricane Helene. We’re beyond grateful for the outpouring love and support from near and far. Our restaurants will remain closed until water is restored. Many have reached out asking for ways to help. We launched an Asheville Employee Relief Fund to give direct financial assistance to our team members who are temporarily out of work during this time.

Meherwan Irani is in DC representing the Independent Restaurant Coalition. On behalf of the 500,000 independent restaurants in the country, they covered a variety of issues with our US Representatives and Senators ranging from childcare assistance to unchecked credit card swipe fees to fairness and regulation in service charge taxation to delivery app fees and charges. These issues have a far more severe economic impact on independent restaurants that have no collective voice or ability to advocate for themselves. The IRC is and can be that voice - but we need restaurants to officially become members.
