Just like our almonds and walnuts, we use specialized harvesters to gently shake our olive trees when the fruit is at peak ripeness. This preserves all the rich flavor and nutrition while protecting the integrity of the olives. Next, the olives are pressed to create our single-origin extra virgin olive oil—a true farm-to-bottle experience. Like wine grapes, olives have unique characteristics influenced by their variety, growing conditions and when they are harvested. Pretty stoked to share that today, October 22 of 2024, we are making farm history by starting to harvest regenerative organic walnuts using our TOL harvester equipment. This equipment allows us to leave the soil covered and protected, enabling us to work on soil health. Our shake and catch style harvest goes directly into a cart and never touches the ground. We are proud to push boundaries with regenerative farming in the Central Valley of California!
