To create our rye whiskey, we opted to use all malted rye vs the traditional use of raw grain. While malting adds considerable cost upfront, we feel the added layers of depth and complexity that we get as a result more than justify the expense. Our Malted Rye whiskey starts with growing a very specific heirloom variety of rye called Danko on our co-founders family farm. This particular variety, once malted, lends a distinct character of cocoa powder that we further accentuate with the use of caramel malted rye. On Tuesday, we hosted a field day for our staff, distributors, and local retailers. We were able to dodge the rain long enough to share our terroir-focused vision and approach to making our whiskies amongst our wheat and rye fields just a few miles from our distillery. Jochum Wiersma from the University of Minnesota was on site to talk about their work in small grains breeding and research. Jochum has helped us select the varieties we are growing to make our whiskies. We finished the night back at the distillery for tours and a sneak peak tasting of our bourbon.
