????A new study by the Journal of Sustainable Tourism, shows that implementing a nudge such as redesigning hotel menus to place climate-smart, plant-based menu items first, hotels can significantly reduce their environmental impact. The lead author, Sofie Voss, from the University of Surrey said, "By simply restructuring how hotels present food options, they can enable guests to make more sustainable choices. In collaboration with Mercy For Animals, the City Council of Sammamish, Washington, voted to create a plant-based-by-default catering policy for city-sponsored events and meetings! This is a huge win for animals, human health, and the environment. This exciting policy comes just a month after Los Angeles County also voted to prioritize plant-based foods. ? The Power of Plant-Based Nudges We're excited to share game-changing findings on the impact of plant-based menu nudges in a real-world restaurant setting. Purpose: To explore how modifications in restaurant menus can nudge consumers towards plant-forward choices, addressing both environmental concerns and consumer behaviour dynamics Across various interventions, we observed significant shifts in consumer behaviour: ?? Dine-in interventions: descriptive and promotional nudges increased plant-based selections ?? Linguistic changes in menu descriptions boosted plant-based meal orders by 9 percentage points ?? Burrito of the Day promotion prioritised plant-based options without sacrificing overall sales Our study, conducted at the Gracias Granny restaurant in Mumbai, validates the effectiveness of choice architecture and offers actionable data for future sustainability efforts in diverse restaurant environments. It highlights the potential of menu nudges to drive meaningful shifts towards plant-based diets.
