Thank you so much to our community, our city, our region, for this incredible honor. The People’s Choice in Fine Dining is not something we take lightly. In 2018 when we’re working toward opening our doors, we were told that “Filipino fine dining is an oxymoron.” Almost 6 years later, the public has felt otherwise. It’s beautiful to see the wide spectrum that our culture and cuisine have been able to fill, not only across the nation, but the world. On top of all of that, to be recognized as a space that represents the home that raised us—the Pacific Northwest. We feel so blessed to move into Filipino American History Month with this energy, knowing that our moments are your moments too. As Dorothy Cordova said “everything that happens [in the United States] also happens to us.” Thank you, to all of you, for showing up and allowing us to represent the many intersections of being a hyphenated American. Did you know that the City of Seattle is offering rebates of up to $8000 to make the switch to electric? ?? Many thanks to El Centro de la Raza, the Building Decarbonization Coalition, and Seattle's Office of Sustainability and Environment for this opportunity to showcase the power of induction cooking. Not only is cooking on induction healthier for our lungs - it is fun, fast, and precise. As our homes, offices, and restaurants become increasingly powered by renewable energy we must consider food and cooking as essential pieces of this transformation. At Archipelago SPC we are always interested in pushing the envelope on food and cooking, both in the kitchen and how we approach systems change. As we continue to explore how cultural techniques meet new technology, I'm so excited to continue to share. We seat 12 at a time in a communal dining room, where we create an interactive experience dedicated to telling the story of how Filipino Americans have contributed to the landscape and history of the Pacific Northwest.
